Shane Harper’s career changed after Miller Fisher syndrome affected his vision, balance and sense of taste. That title captures the overlap between his culinary background and his current role. Harper’s work is part of a restaurant operation in which growing, sourcing and cooking are connected, rather than separate stages. As he told Brandon Donnelly, “We pick as close to service as possible. When we do tomatoes, tomatoes get picked, they never see the fucking fridge. Ever, ever, ever.” The point is practical as well as philosophical: the timing of harvest is tied closely to service.

That broader network matters: the restaurant’s farm-to-fork approach is not a claim that every ingredient comes from its own grounds. The 2026 listing says its cooking uses on-site ingredients alongside products sourced across Canada. In the 2023 profile, co-chef and co-owner Daniel Hadida described the approach as “purchasing beautiful ingredients directly from a community of purveyors and presenting them in ways that delight our customers.” Suppliers can help shape the menu, while the garden brings the restaurant closer to the timing and character of what it grows.

For context, Canada’s 100 Best says its 2025 panel had 160 judges, each of whom submitted a top 10 restaurant experiences list from the previous year. The judges considered service, décor and cellar depth, with food quality the leading factor. The 2025 ranking therefore aimed to reflect restaurant experiences in 2024; it should not be read as a direct measurement of the 2025 calendar year.
