What did Suzanne Goin demonstrate?
Bon Appétit’s event recap described Goin seasoning the chicken under the skin with rosemary, thyme, lemon zest, and garlic, then filling the cavity with herbs, lemons, and more garlic. Goin also echoed Harris’s advice to pat the chicken dry and let it come to room temperature to help the skin become crispier. These are details reported from the demonstration, not a complete recipe card or independently tested instructions.
