Who Is Isaac McHale? The Chef-Patron Behind The Clove Club

Isaac McHale is the Chef-Patron of The Clove Club, the seasonal tasting-menu restaurant in Shoreditch Town Hall, London. The name in the headline, “Isaac Hayden McHale,” is not supported by the restaurant’s official page or by World’s 50 Best and Great British Chefs coverage, which all use “Isaac McHale.” This article uses that name and explains what is and is not established about him.

Why the name in the headline differs from the published record

A TechBullion article dated 27 July 2025 calls its subject “Isaac Hayden McHale” and offers a broad personal biography. The restaurant and industry sources that name him, including The Clove Club’s official page, World’s 50 Best Restaurants reporting, and a 2025 Great British Chefs profile, use Isaac McHale and do not include “Hayden.” Until a stronger source confirms it, treat the middle name as unverified.

The same TechBullion article makes several claims that the stronger sources do not corroborate. Readers should not treat any of the following as established fact:

  • international work in New York and Tokyo
  • specific personal inspirations

His current role: Chef-Patron of The Clove Club

The Clove Club’s official page names McHale as Chef-Patron. It describes a seasonal tasting menu of modern dishes rooted in technique, stripped back to essential elements, and built around produce from the British Isles. The page currently states that the restaurant holds two Michelin stars; that status is covered in the recognition section below.

How The Clove Club started: 2010 and 2013

Two dates appear in published accounts, and they refer to different stages of the same project. Keep them separate.

The supper-club phase (2010)

World’s 50 Best reports that McHale co-founded The Clove Club with Daniel Willis and Johnny Smith in 2010. That account describes an early supper-club collaboration rather than a permanent restaurant.

The permanent restaurant (2013)

A 2025 Great British Chefs profile says the permanent restaurant opened in 2013. Quote the year as the opening of the restaurant itself, not the start of the founders’ work together.

Career before The Clove Club

The 2025 Great British Chefs profile gives the following career history. These are profile details rather than a fully verified biography, so check them against the original if you need them for a formal citation.

  • Experience at Noma and at De Wulf
  • Work at Tom Aikens
  • Six years at The Ledbury, where he became development chef

His cooking philosophy in his own words

The clearest statement of his approach comes from a World’s 50 Best profile published in 2020. It is worth reading in full because it corrects a common assumption about the restaurant.

Product first, then technique

McHale says: “I always thought we would be a technique-focused restaurant, but I realised that we are a product-focused restaurant, followed by technique and degree of cooking.” The restaurant’s own description puts technique at the centre, so his remark is best read as a ranking of priorities: ingredients decide the dish, and technique serves them.

What he calls a “wow moment”

In the same profile he describes the experience he wants diners to have: “Sometimes, you’re just eating, and it’s nice and you’re chatting. Some other times, you taste something and you just look up and go ‘wow – that’s really good’.” The statement describes a relaxed meal punctuated by a few moments of surprise, not a menu designed around spectacle.

  • For the 2010 and 2013 milestones, attribute 2010 to the co-founders’ supper-club project and 2013 to the permanent restaurant.
