What Are the Nutritional Differences Between Beef and Plant-Based Meat?

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Plant-based ground-beef alternatives often deliver more fiber and less saturated fat than ground beef, but they are not nutritionally identical and no single product represents the whole category. In a 2021 U.S. analysis, the sampled alternatives generally had less protein, zinc and vitamin B12 than ground beef, while sodium was higher. Whether one is the better choice depends on the product label, the leanness of the beef, the portion and how each is prepared.

The fairest comparison uses the same serving size and the same cooked or raw basis. The figures below use a 3-ounce cooked comparison from a 2021 analysis of 37 U.S. plant-based ground-beef products, with ground beef entries ranging from 70% to 90% lean. They are sample medians and comparison entries, not a guarantee for every package.

The clearest apples-to-apples comparison

Tso and colleagues’ 2021 analysis used nutrition information for 37 plant-based ground-beef alternatives available in the United States. The study compared a cooked 3-ounce portion of the alternatives with cooked ground beef at three fat levels: 90%, 80% and 70% lean. That design matters because cooking changes weight and nutrient concentration, and a very lean beef patty is not an equivalent benchmark for a fattier one.

Nutrient (per 3-ounce cooked portion) Plant-based alternatives: median Ground beef comparison What the comparison indicates
Calories 153 kcal 182 kcal for 90%-lean beef to 230 kcal for 70%-lean beef Alternatives were lower than the beef entries in this sample, with the gap depending on beef leanness.
Protein 12.6 g About 21.5–22.6 g Ground beef supplied substantially more protein in the sampled products.
Saturated fat 4% of the study-reported Daily Value 19–30% of the Daily Value across the 90%, 80% and 70% lean entries The alternatives were lower in saturated fat, although the amount still varies by recipe.
Fiber 15% of the Daily Value 0 Fiber was a category-level difference in this comparison: the beef entries contained none, while the alternatives had a median amount.
Sodium 18% of the Daily Value 2–4% of the Daily Value The alternatives were much saltier as sold in the study. Salt added while cooking beef can change the finished dish.
Iron 10% of the Daily Value 12–14% of the Daily Value The beef entries were slightly higher in this sample; formulations and fortification can change the result.

The same analysis reported 6.0 grams of total fat and 12.7 grams of carbohydrate per cooked 3-ounce serving as the plant-based median. It did not present a directly matching total-fat or carbohydrate figure for every beef entry in the comparison, so those numbers should not be treated as a complete category-to-category profile.

The percentages in the table are the study’s label-based Daily Value figures. They are not a prediction for every brand or recipe. A plant-based patty made with a different protein blend, oil, binder or fortification package can have a very different panel.

What the differences mean for each nutrient

Protein: beef was higher in the sampled products

Protein is the most consistent numerical advantage for the beef entries in the 2021 comparison. The alternatives’ median was 12.6 grams per cooked 3-ounce serving, compared with roughly 21.5 to 22.6 grams for the beef entries. That difference can matter when a small portion is expected to provide a large share of a meal’s protein.

Do not assume that every alternative is low in protein. The category includes products with very different recipes, and some are fortified or formulated to raise protein. Read the grams per serving and make sure the serving size is comparable before drawing a conclusion.

Fat and saturated fat: the beef cut changes the result

The alternatives had a median of 6.0 grams of total fat per cooked 3-ounce serving and a lower saturated-fat percentage than all three beef leanness levels in the study. Beef became more calorie-dense and had a higher saturated-fat percentage as the lean percentage fell from 90% to 70%.

That is why “beef” is too broad a comparison. A very lean ground-beef product and a higher-fat burger can produce different calorie and saturated-fat results. Compare the exact lean designation or the package’s total and saturated fat rather than using a generic beef value.

Fiber: a meaningful structural difference

Ground beef contains no dietary fiber, whereas the plant-based alternatives in the 2021 sample had a median of 15% of the Daily Value per cooked 3-ounce serving. Fiber content comes from the ingredients used in a particular formulation, so it is not guaranteed by the words “plant-based” alone. Some products may provide little fiber; others may provide considerably more than the study median.

When fiber is a deciding factor, use the Nutrition Facts panel for the product you will actually eat. Also check whether you are comparing the same cooked weight, because water loss or gain can alter the amount listed per portion.

Sodium: check the label and the pan

Sodium was one of the largest differences in the 2021 cooked comparison. The alternatives’ median was 18% of the Daily Value, while the beef entries were 2% to 4% before any additional seasoning described by the study. A plain beef patty can therefore look very different from a beef dish seasoned with salt, soy sauce, a spice blend or a packaged sauce.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

A broader analysis published in 2024 in Nutrients found a mean of 652 milligrams of sodium per 100 grams across its meat-alternative products, with an enormous range from 54 to 2,629 milligrams. That analysis used raw meats and a varied set of alternative products, so its mean cannot replace the cooked 3-ounce comparison. It does, however, show why a category average can hide large product-to-product differences.

Iron: close values do not settle absorption

In the 2021 sample, the alternatives supplied a median 10% of the Daily Value for iron, while the beef entries supplied 12% to 14%. The small numerical difference should not be read as proof that the body obtains the same amount of iron from both foods. Plant-based products may use added iron, and the evidence summarized in a 2025 dietary-guidance review does not establish that fortified nutrients have the same bioavailability as nutrients naturally present in beef.

Ingredient choices and fortification levels vary, so the only reliable starting point is the specific label. If iron intake is important for a medical or dietary reason, discuss the overall diet with a qualified clinician rather than judging a single patty by its percentage alone.

Zinc and vitamin B12: beef generally led, but fortification can narrow the gap

The 2021 analysis found that most plant-based alternatives had less zinc and vitamin B12 than the ground-beef comparisons. Beef naturally contributes both nutrients. Plant-based products can be fortified, however, so the category does not have one fixed B12 or zinc profile.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

Look for the actual microgram amount and Daily Value on the label. Two products sold in the same refrigerated section can differ sharply: one may list vitamin B12 and zinc, while another may list neither. A label comparison is more informative than assuming that all alternatives either contain or lack these nutrients.

Carbohydrate and calories depend on the recipe

The alternatives’ median carbohydrate content was 12.7 grams per cooked 3-ounce serving, and their median energy value was 153 calories. Carbohydrate may come from starches, grains, legumes or other binders used to create texture. Beef itself contains no carbohydrate before ingredients such as breadcrumbs, sauces or sweeteners are added, but a prepared beef meal can contain substantial carbohydrate from those additions.

Calories also depend on the fat level of the beef and on cooking losses. In the study’s beef entries, the 3-ounce cooked portions ranged from 182 calories for 90%-lean beef to 230 calories for 70%-lean beef. Use the package values for the portion and preparation you are actually comparing.

Why plant-based meat labels vary so much

“Plant-based meat” describes a category, not a standardized recipe. Products can use different combinations of plant proteins, oils, starches, flavorings, vitamins and minerals. The 2023 integrative review of commercialized products, published in PMC, likewise describes broad variation in nutrient profiles across products.

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The 2024 analysis makes that spread measurable. Across its alternative products, mean protein was 17.4 grams per 100 grams, with values from 0 to 50 grams. Mean fiber was 3.9 grams per 100 grams, ranging from 0 to 12.9 grams. Sodium ranged from 54 to 2,629 milligrams per 100 grams. These are raw-product, per-100-gram figures from a broad sample, not cooked serving values and not a ranking of every item on the market.

Fortification is another source of difference. Added B12, iron or zinc can raise a product’s label values, while another product may contain no added micronutrients. The 2025 review, “Dietary guidance on plant-based meat alternatives for individuals wanting to increase plant protein intake”, emphasizes both formulation variability and the limited evidence on the bioavailability of nutrients added to these foods.

How to compare a package with ground beef

Use this sequence when deciding between a particular alternative and a particular beef product:

  1. Match the basis. Compare cooked with cooked or raw with raw. A raw 100-gram value and a cooked 3-ounce value are not interchangeable.
  2. Match the portion. Convert the portions to the same weight if necessary. Record whether the package defines a patty, serving or edible portion differently.
  3. Identify the beef leanness. Note the lean percentage or the package’s total fat. A 90%-lean product is a different benchmark from 70%-lean beef.
  4. Read protein, calories and saturated fat together. A lower calorie value does not by itself indicate a better choice if the portion also supplies much less protein or a different amount of fat.
  5. Check fiber and sodium. Plant-based products may add fiber but also carry more sodium. For beef, include salt, sauces and seasoning added during cooking in the comparison.
  6. Inspect iron, zinc and vitamin B12. Record both the amount and the Daily Value. Fortification means two plant-based products can have different micronutrient profiles.
  7. Review the ingredient and preparation context. A burger eaten with a salty sauce, cheese, bun and fries has a different nutritional profile from the patty alone. Keep the surrounding meal consistent when testing the substitution.

Is plant-based meat healthier than beef?

There is no single yes-or-no answer supported by these comparisons. Plant-based alternatives may be preferable when your priority is adding fiber or reducing saturated fat, provided the product’s label actually shows those characteristics. Ground beef may be preferable when you need more protein per small serving or want naturally occurring vitamin B12 and zinc. Sodium can reverse an apparent advantage if the alternative is heavily salted, and a lean beef product can narrow the calorie and saturated-fat difference.

The practical decision is therefore nutrient-specific. Start with the health or dietary feature you are trying to change, then compare the two labels on the same weight and preparation basis. If the alternative provides the desired fiber or saturated-fat profile but is high in sodium, the trade-off is visible. If it is fortified with B12 and zinc yet supplies less protein, portion size may be the deciding factor.

What the evidence can and cannot tell you

The 2021 analysis is the strongest like-for-like example because it used cooked 3-ounce portions and several beef fat levels. Its medians describe the products included in that study, not a universal nutritional identity for every plant-based patty or every beef recipe.

The 2024 analysis is useful for showing how widely alternative products vary, but its raw, per-100-gram method is not a direct substitute for the cooked comparison. Added salt is another source of uncertainty: meat is often salted during preparation, while some alternatives may require less added salt, so the final meal can differ from the package panel.

Finally, a Nutrition Facts label reports the amount present, not necessarily the amount absorbed. The 2025 review identifies limited evidence on the bioavailability of nutrients added to plant-based meat alternatives. That is a reason to avoid declaring fortified iron or vitamin B12 automatically equivalent to the nutrients in beef, not a reason to ignore the label.

Bottom line for a shopping decision

Compare the exact products, not the category names. In the 2021 cooked 3-ounce sample, plant-based alternatives were lower in calories and saturated fat, supplied fiber, and were higher in sodium; ground beef supplied more protein, zinc, vitamin B12 and slightly more iron. Beef leanness, recipe, fortification and added salt can change every one of those trade-offs. A label matched for serving size and preparation gives a more accurate answer than asking whether plant-based meat or beef is universally healthier.
