The scripted instruction was “Leave the gun”; an earlier scene, in which Clemenza’s wife reminds him not to forget the cannoli, gave Castellano the setup for his addition.
What is the “take the cannoli” line?
After Paulie Gatto is killed, Peter Clemenza tells his companion to leave the gun and adds, “take the cannoli.” The line’s punch comes from the contrast between disposing of a weapon and remembering a dessert. Vanity Fair described the second clause as an inspired ad-lib.

Who added the cannoli?
Richard Castellano, who played Clemenza, supplied the “take the cannoli” wording. The American Film Institute’s account says Castellano improvised it after a suggestion from Ardell Sheridan, his onscreen and real-life wife, drawing on the earlier reminder scene.
The distinction between setup and punchline is also reflected in director Francis Ford Coppola’s reported account. In a 2024 interview report, Coppola said he added the scene in which Clemenza’s wife calls after him, “Don’t forget the cannoli!” and that Castellano made up the later line. That attribution is Coppola’s account as reported by CinemaBlend, rather than a separately verified transcript.

Was “take the cannoli” in the script or the novel?
The University of California, Berkeley’s film analysis says neither Mario Puzo’s novel nor the shooting script mentions cannoli. Mark Seal, author of Leave the Gun, Take the Cannoli: The Epic Story of the Making of The Godfather, likewise recounts that the screenplay had Clemenza say “Leave the gun.” The cannoli clause is thus commonly attributed to Castellano’s improvisation, not to the written line.
Why does the earlier reminder matter?
The earlier scene makes the dessert instruction feel like a callback rather than a random joke. Clemenza’s wife reminds him to bring home cannoli as he leaves; later, after the killing, Castellano’s addition brings that domestic detail into the crime scene. Berkeley’s analysis highlights this contrast between Clemenza’s family life and his work as a hit man.

The clearest account credits different contributions: Coppola with the earlier reminder, Sheridan with suggesting the later addition based on that reminder, and Castellano with making up the spoken “take the cannoli” line. AFI and Coppola’s reported explanation support that division of credit.
