Short answer: Not overall, according to the U.S. production systems that have been modeled and measured. A 2025 U.S. model found that grass-fed beef remained at least as carbon-intensive as industrial beef even after applying an optimistic soil-carbon credit. A 2012 whole-system model found that its grass-fed system needed substantially more land, water, animals and fossil-fuel energy to produce the same quantity of beef. A 2022 West Coast life-cycle study found a trade-off: conventional grain-finished cattle had the lowest greenhouse-gas footprint, while one 20-month grass-fed treatment used the least consumptive water. Those results describe specific systems, regions and assumptions—not every ranch or every package labeled grass-fed.
The useful answer therefore depends on which environmental measure you mean: climate emissions, land, consumptive water, or another outcome. The studies do not establish a universal biodiversity, soil-health or local-water-quality winner.
What the strongest comparisons found
A 2025 U.S. model: soil carbon did not reverse the climate result
Eshel and coauthors combined empirical evidence with cattle-herd and animal-performance equations to model a range of U.S. grass-fed operations, from extensive semiarid rangelands to more intensive systems in favorable settings. The work is a model-based comparison, not a measurement of every farm. Its result was consistent across the modeled operation types, management practices and ration qualities.
| Modeled system or scenario | Greenhouse-gas emissions | How to read the figure |
|---|---|---|
| Grass-fed before a soil-carbon enhancement | 280–390 kg CO2eq per kg of protein | Range across the modeled U.S. grass-fed scenarios |
| Grass-fed with the modeled rangeland soil-carbon credit | 180–290 kg CO2eq per kg of protein | Includes the paper’s optimistic sequestration scenario |
| Industrial U.S. beef | 180–220 kg CO2eq per kg of protein | Modeled comparison range in the same paper |
With the soil-carbon credit included, the grass-fed range still sits somewhat above the industrial range overall, although the ranges overlap. That does not mean every grass-fed operation performs worse than every conventional operation; it means the modeled U.S. systems did not show grass-fed beef to be less carbon-intensive as a category. The paper’s conclusion is that even the favorable soil-carbon assumption did not overturn the comparison. A 2012 whole-system model: lower productivity increased resource requirements
Judith L. Capper compared characteristic U.S. conventional feedlot-finished, “natural” and forage-fed grass-fed systems with a deterministic model. In that definition, grass-fed cattle ate forage from birth to slaughter and received no grain or other non-forage supplementation. The model asked what each system would require to produce 1.0 × 109 kilograms of hot carcass weight.
| Resource or output for 1.0 × 109 kg beef | Conventional system | Modeled grass-fed system |
|---|---|---|
| Land | 5,457 × 103 hectares | 9,868 × 103 hectares |
| Water | 485,698 × 106 liters | 1,957,224 × 106 liters |
| Carbon footprint | 15,989 × 103 tonnes CO2eq | 26,785 × 103 tonnes CO2eq |
Expressed as the conventional system’s requirement relative to the grass-fed system for the same modeled output, conventional production used 55.3% of the land, 24.8% of the water, 56.3% of the animals and 71.4% of fossil-fuel energy. Capper linked the difference largely to productivity and the longer modeled time to slaughter for grass-fed cattle. These are model outputs under the paper’s system definitions, not emissions or water use for an individual steak. The complete assumptions and results are in Capper’s 2012 Animals paper.
A 2022 West Coast life-cycle study: one water result favored grass-fed, climate did not
A regional life-cycle study compared four cattle systems on the U.S. West Coast. Because the systems had different finishing periods and boundaries, its figures should not be merged with the two U.S. models above.

| West Coast system | Greenhouse-gas footprint | Consumptive water use |
|---|---|---|
| Conventional grain finishing for 128 days | 4.79 kg CO2e per kg hot carcass weight | 933 liters per kg hot carcass weight |
| Grass-fed for 20 months | 6.74 kg CO2e per kg hot carcass weight | 465 liters per kg hot carcass weight |
| Grass-fed for 20 months, then 45-day grain finish | 6.65 kg CO2e per kg hot carcass weight | 678 liters per kg hot carcass weight |
| Grass-fed for 25 months | 8.31 kg CO2e per kg hot carcass weight | 1,250 liters per kg hot carcass weight |
In this study, conventional grain finishing had the lowest reported greenhouse-gas footprint. The 20-month grass-fed treatment had the lowest consumptive-water use, at 465 liters per kilogram of hot carcass weight. The 25-month grass-fed treatment had the highest water use and greenhouse-gas footprint among the four. The authors found trade-offs among emissions, water, energy, meat quality and economics and concluded that “no system resulted in absolute economic, meat quality, and environmental superiority.” The article is available from the Journal of Animal Science.
Why a simple grass-fed-versus-conventional verdict is difficult
Climate impact depends on the functional unit
The 2025 paper reports kilograms of CO2-equivalent per kilogram of protein. Capper reports total modeled emissions for producing a fixed quantity of hot carcass weight. The West Coast study reports kilograms of CO2-equivalent per kilogram of hot carcass weight. A number from one functional unit cannot be directly ranked against a number from another. Always ask whether a result is per kilogram of protein, carcass weight, live animal, serving or total national output.
Productivity changes the denominator
Cattle that grow more slowly remain in the herd longer and require more feed, care and land before producing the same amount of beef. In Capper’s model, the longer time to slaughter and lower productivity of the forage-based system helped drive its larger land, water, animal and energy requirements. This is why comparing one animal or one acre can give a different impression from comparing equal quantities of beef.

Soil carbon is a credit, not a guaranteed offset
Grazing can change soil-carbon stocks, but the direction and size of that change depend on soils, climate, vegetation, grazing management, baseline conditions and the accounting period. The 2025 model deliberately tested a favorable rangeland sequestration scenario; even that credit left its grass-fed range at 180–290 kg CO2eq per kilogram of protein, versus 180–220 for modeled industrial beef. The result does not establish that every pasture stores carbon, that storage continues indefinitely, or that a retail grass-fed claim carries a verified carbon benefit.
Water is not one universal measure
The West Coast paper measured consumptive water use, while Capper’s whole-system model reported total water requirements under its own U.S. system assumptions. Geography, irrigation, rainfall, feed production, pasture quality and the definition of water use can change the result. A grass-fed system can have a lower consumptive-water result in one region and a higher total water requirement in another without the studies contradicting each other.
Model boundaries matter
The 2025 analysis is a herd-and-emissions model, Capper’s work is a deterministic whole-system model, and the 2022 paper is a regional life-cycle assessment. They use different production definitions, time periods, inputs and boundaries. Their figures are best treated as evidence about the systems each paper defined, not as a single national scorecard.

What each environmental measure says
Greenhouse gases: conventional was lower in the available comparisons
Across the comparisons supplied here, conventional or industrial beef had the lower modeled or measured greenhouse-gas result. The 2025 model found grass-fed emissions of 280–390 kg CO2eq per kilogram of protein before its soil-carbon scenario and 180–290 after it, against 180–220 for industrial beef. The West Coast study similarly reported 4.79 kg CO2e per kilogram of hot carcass weight for conventional grain finishing, compared with 6.65–8.31 for its three grass-fed treatments. These findings support a climate advantage for the conventional systems in these studies, while leaving room for variation among farms.
Land: equal output generally favored the higher-productivity conventional model
For the same 1.0 × 109 kilograms of beef, Capper’s conventional system used 5,457 × 103 hectares and the grass-fed system used 9,868 × 103 hectares. More land is not automatically an ecological failure: pasture may be unsuitable for crops, and land can have alternative uses or conservation value. However, the study’s result shows why land demand must be included when evaluating a system’s total footprint rather than judging it by the feed source alone.
Water: the answer changes with region and accounting
The 2022 West Coast comparison demonstrates the trade-off clearly. Its 20-month grass-fed treatment used 465 liters of consumptive water per kilogram of hot carcass weight, below the conventional treatment’s 933 liters. Yet Capper’s U.S. whole-system model calculated 1,957,224 × 106 liters for grass-fed production versus 485,698 × 106 liters for conventional production at the same total output. Those figures cannot be averaged into one “grass-fed water number.”

Biodiversity, soil health and local water quality remain site-specific
The comparisons above do not establish a general ranking for biodiversity, soil health or local water quality. Those outcomes can depend on stocking rates, pasture condition, manure management, erosion, watershed stress and what the land would otherwise support. A lower greenhouse-gas result does not automatically prove better habitat, and a lower consumptive-water result in one regional system does not prove lower watershed impacts everywhere.
What “grass-fed” means in the comparisons
Production labels can conceal major differences in duration and finishing. Capper’s modeled grass-fed cattle remained on forage from birth to slaughter with no grain or other non-forage supplementation. The West Coast study used three different grass-fed schedules: 20 months, 20 months plus a 45-day grain finish, and 25 months. Those are materially different systems, so “grass-fed” by itself is not enough information for an environmental comparison.
A retail grass-fed label also does not guarantee lower emissions. The evidence here does not verify the practices, carbon balance or water footprint of any particular package. To evaluate a product claim, look for the production definition, geography, finishing diet, duration and a transparent life-cycle or farm-level accounting method rather than assuming the label supplies those details.
A practical way to judge a beef claim
- Name the impact you care about. If the priority is climate, use greenhouse-gas emissions with the functional unit stated. If it is water, check whether the figure is consumptive water and identify the region.
- Check equal-output comparisons. A study that compares the resources needed for the same quantity of beef answers a different question from one that compares individual animals or acres.
- Identify the production pathway. Record whether cattle are forage-only, grain-finished, or grass-fed before a short grain finish, and note the time to slaughter.
- Ask how soil carbon was counted. Treat sequestration as a measured or explicitly modeled change with a stated time horizon, not as an automatic deduction for grazing.
- Read the boundary and location. A West Coast life-cycle result, a national herd model and a whole-system U.S. model are useful for different decisions. None alone represents every country, farm or retail product.
- Do not infer unmeasured benefits. If a source reports emissions and water but not biodiversity or local water quality, those outcomes remain unresolved rather than automatically favorable.
Verdict
For the U.S. systems examined, grass-fed beef is not shown to be better for the environment overall. The clearest climate comparisons favor conventional or industrial beef, even when an optimistic soil-carbon credit is applied to grass-fed production. Land and total modeled water requirements also favored the conventional system in Capper’s equal-output model. The important qualification is that environmental performance is multidimensional: a 2022 West Coast study found one grass-fed treatment used less consumptive water while producing more greenhouse gases. The most defensible conclusion is therefore conditional, not a blanket label-based claim: compare the specific farm system, metric, geography and accounting method.
