How to Store Artisanal Cheese So It Stays Fresh Without Drying Out

Special offer. See more information about Outbyte and uninstall instructions. Please review EULA and Privacy policy.

The most reliable method is simple: keep the original package until you are ready to open the cheese, then wrap the cut piece in fresh specialty cheese paper, waxed paper, or parchment. Refrigerate it in a humid, steady part of the refrigerator, keep the package away from the freezer and strong odors, and check the wrap for wetness or trapped condensation.

Storage temperature and mold decisions depend on the cheese. The American Cheese Society (ACS) gives a 35–45°F, high-humidity range for cheese; USDA FSIS says the refrigerator should be 40°F or colder, while FDA guidance for queso-fresco-type cheeses also requires 40°F (4°C) or below and prompt use.

What fresh storage is trying to protect

Artisanal cheese changes when it is exposed to a refrigerator’s dry air, neighboring aromas, and fluctuating temperatures. Once a package is opened, the cut surface can lose moisture while the cheese absorbs smells from other foods. ACS specifically advises re-wrapping opened cheese in fresh waxed, parchment, or specialty cheese paper to limit both drying and flavor pickup.

The goal is not to seal cheese in the coldest possible spot. It is to create a clean, humid, stable micro-environment while keeping the refrigerator cold enough for food safety. ACS recommends 35–45°F at high humidity. USDA FSIS sets the refrigerator target at 40°F or below. Because those recommendations overlap, set the appliance so the cheese remains at or below 40°F without allowing it to freeze.

Humidity must be balanced. A wrap that is too loose lets moisture escape; a wet wrap pressed against the cheese can leave condensation trapped on the surface. The practical routine is to cover the cheese, inspect the paper regularly, and replace it when it becomes wet, dirty, or no longer fits closely.

Step-by-step: re-wrap cheese immediately after cutting

  1. Leave the factory package closed until use. For any cheese you are not serving yet, keep its original packaging intact. This is especially important for soft, fresh cheeses, for which FDA advises retaining the unopened package until use.
  2. Prepare a clean work area and knife. Use a clean knife for the cut so crumbs, food residue, and unwanted mold are not transferred to the remaining piece. Work quickly enough that the cheese is not left exposed while you search for wrapping.
  3. Choose a fresh first wrap. Use specialty cheese paper when available. Waxed paper or parchment are ACS-approved alternatives. Use a new sheet rather than reusing paper that has picked up moisture, grease, or odors.
  4. Wrap the entire piece. Cover the cut face and all exposed edges. The wrap should stay in contact with the cheese without crushing a soft rind or leaving large open gaps. Fold the paper so the package remains closed when moved.
  5. Add a covered outer space. Place the wrapped cheese in a covered container or an appropriate refrigerator drawer. The container provides a second barrier against strong odors and helps keep the local humidity steadier, but it does not replace the paper wrap.
  6. Put it in a cold, stable location. Use a humid produce drawer or a temperature-controlled meat-and-cheese drawer if your refrigerator has one. Keep the refrigerator at or below 40°F, and keep the cheese away from the freezer compartment.
  7. Mark the opening date. Write the date on the outer package. This creates a simple rotation record and helps you give soft cheeses priority without guessing when they were opened.
  8. Inspect before each use. Look for a wet or dirty wrapper, liquid condensation, sliminess, unexpected mold, or an off odor. Replace paper that is no longer clean and snug. Follow the cheese’s own use-by instructions, with particular care for soft cheeses.

Which paper should you use?

ACS names three suitable first-wrap materials. They all reduce the exposure that causes opened cheese to dry or pick up other flavors, but they are not interchangeable with leaving the cheese bare.

Wrapping choice Best use What to watch
Specialty cheese paper Best direct fit for opened artisanal cheese; it is the material ACS explicitly recommends. Replace it when wet, dirty, or loose. Keep the wrapped cheese in a covered refrigerator space.
Waxed paper ACS-approved alternative when specialty paper is unavailable. Use a fresh sheet after cutting and check that moisture is not collecting against the cheese.
Parchment paper Another ACS-approved alternative for re-wrapping an opened piece. Keep the fold secure and change the paper if it becomes damp or contaminated.
Plastic-only wrap Can provide a tight seal when paper is not available. It is not ACS’s preferred first wrap for natural cheese. Inspect frequently for trapped moisture and absorbed odors.
No wrap Not an appropriate storage method for an opened piece. Exposed cheese loses moisture and encounters refrigerator odors; it also does not follow ACS’s re-wrapping guidance.

If you use plastic as an outer barrier, keep the paper first wrap in place rather than pressing plastic directly against a moist natural surface. This follows the evidence-backed preference for paper while adding protection from odors and drying air.

Where should cheese go in the refrigerator?

Vegetable or fruit drawer

ACS prefers the bottom vegetable/fruit drawer because it is generally more humid and less exposed to the repeated temperature swings that occur near the door. Put the wrapped cheese in a clean, dry section of the drawer rather than beside leaking produce.

Temperature-controlled meat-and-cheese drawer

USDA FSIS notes that a temperature-controlled meat/cheese drawer can maximize storage time. Use it when the setting keeps the cheese at or below 40°F and the compartment is clean. Keep the package covered so it does not exchange odors with nearby foods.

Why the door is a poor choice

USDA FSIS advises against storing perishable food in the refrigerator door. Door shelves warm each time the door opens, so they are not a stable location for artisanal cheese. Move cheese from the door to a drawer or another consistently cold area.

Keep it away from the freezer and strong odors

Do not let the package touch the freezer compartment or sit where it can freeze. Freezing is outside the recommended storage approach and can damage the cheese’s texture. Strong-smelling foods can also affect flavor; a covered container and a fresh paper wrap reduce that exposure.

Maintain a clean, dry shelf environment

USDA Agricultural Marketing Service guidance for cheese storage rooms emphasizes uniform temperature and humidity, clean dry shelves, and air circulation as ways to minimize undesirable mold growth. In a home refrigerator, that means wiping spills, removing spoiled food, and avoiding a tightly packed drawer that prevents air from moving around the packages.

Adjust the routine for the type of cheese

Soft, high-moisture and fresh cheeses

Soft cheeses contain more available moisture and need stricter handling than aged, hard cheeses. FDA’s guidance for queso-fresco-type cheeses specifies refrigeration at or below 40°F (4°C), keeping the original unopened package until use, and eating the cheese as soon as possible. Treat those instructions as a separate safety category rather than applying advice for aged hard cheese to them.

After opening a soft cheese, use a clean utensil, close the package promptly, and prioritize it in your rotation. Do not rely on a long storage period simply because the surface looks normal. When the package gives a use-by instruction, follow it. If the cheese develops sliminess, an off odor, or questionable mold, discard it rather than trying to rescue it with the hard-cheese trimming rule.

Aged and hard cheeses

Hard cheese is denser and has less moisture available at the surface, so USDA FSIS provides a specific mold-removal option for this category. That option does not turn hard cheese into a no-maintenance food: keep it wrapped, cold, and dry on the outside of the package, and inspect it each time you open it.

Mixed boards and multiple pieces

Store each opened variety in its own fresh paper wrap. Separate packages prevent one cheese’s moisture or aroma from transferring directly to another. Place all of them in the same stable drawer or covered container, but do not combine pieces in one unmarked bundle.

What to do when you see mold

Hard cheese: the USDA trimming rule

USDA FSIS says that for hard cheese, such as Cheddar, you can cut off at least 1 inch around and below a mold spot. Keep the knife out of the mold itself so you do not drag spores through the clean portion. After trimming, re-cover the remaining cheese in fresh wrap.

The one-inch measurement applies around and beneath the visible spot, not just to a thin surface shaving. Use a clean knife and a clean cutting surface, then discard the trimmed portion.

Soft, high-moisture cheese: do not generalize the rule

Do not apply the hard-cheese trimming instruction to soft, high-moisture cheese. Its structure allows contamination to move beyond what is visible. When a soft cheese has unwanted mold or you cannot determine whether a change is safe, discard it and follow the package or health-authority guidance.

When the problem is not mold

A wet wrapper, slimy surface, or off odor is a storage warning even if you cannot see mold. Remove the cheese from the questionable paper and assess it against the product’s instructions. For a soft fresh cheese, the safer decision is disposal when quality or safety is uncertain.

Plastic wrap: when it helps and when it hurts

Plastic creates a seal, so it can limit air exchange and odors. However, ACS’s preferred first wrap for natural cheese is specialty paper, waxed paper, or parchment. Plastic-only wrapping is therefore a fallback rather than the default. The concern is not that every plastic-wrapped piece will fail; it is that a tight seal can leave condensation and odors in contact with the cheese.

If plastic is the only material available, wrap the piece cleanly, keep it cold, and inspect it more often. If moisture appears inside, open the package, dry the outside of the cheese with a clean disposable towel if appropriate for the product, and re-wrap with fresh paper when you can. Do not leave visibly wet plastic pressed against the cheese.

Troubleshooting common storage failures

The cut surface is dry or hard

  • Check whether the cheese was left unwrapped or loosely covered after cutting.
  • Replace old paper with a fresh sheet of specialty cheese paper, waxed paper, or parchment.
  • Move the package from a dry shelf or the door to a more humid, stable drawer.
  • Check that the refrigerator is not colder than necessary or allowing the cheese to freeze.

The paper is damp or condensation is visible

  • Open the package rather than trapping the liquid against the cheese.
  • Discard wet or dirty paper and use a clean, fresh wrap.
  • Place the package in a clean, covered drawer area, but do not seal visible moisture inside.
  • For soft cheese, treat persistent wetness together with sliminess or off odors as a reason to follow the package’s safety guidance closely.

The cheese tastes like another food

  • Re-wrap the cheese immediately after each use.
  • Use a covered container as an outer barrier.
  • Move it away from strongly scented foods and avoid the door, where repeated opening also causes temperature variation.

Mold keeps returning on the outside

  • Make sure the drawer and shelf are clean and dry.
  • Do not reuse contaminated paper.
  • Check that packages have room for air circulation rather than being compressed together.
  • Apply the hard-cheese trimming rule only when the cheese is genuinely hard; discard questionable soft, high-moisture cheese.

A simple inspection and rotation checklist

  • At opening: record the date, use a clean knife, and re-wrap the remainder immediately.
  • At every serving: confirm the paper is clean and snug and look for condensation, sliminess, mold, or off odors.
  • During refrigerator checks: verify the appliance is at or below 40°F, keep cheese out of the door and freezer area, and remove spills from the drawer.
  • For soft fresh cheese: keep it in its original package until use and eat it as soon as possible after opening.
  • For hard cheese with a mold spot: cut at least 1 inch around and below the spot, keep the knife out of the mold, and re-wrap the retained portion.
  • When uncertain: use the product’s own instructions or health-authority guidance; do not use hard-cheese salvage advice for soft cheese.

The practical standard

Good artisanal-cheese storage is a repeatable handling system rather than a single special container: fresh paper after every opening, a covered and humid refrigerator location, a temperature no higher than 40°F for safety, and inspections that distinguish hard cheese from soft, high-moisture cheese. Those habits address the two quality threats you can control—drying and odor pickup—without trapping condensation or treating every mold spot as if it carried the same risk.
