For a standard California roll, choose cooked surimi in the shape that fits your filling: sticks or leg-style pieces when you want defined pieces to cut or pull apart, and flakes, chunks, or shreds when you want a mixed filling. Then read the package’s ingredient and allergen statements. Surimi is processed fish protein, not automatically crab meat, and the front of a package cannot tell you everything in the recipe.
This U.S.-focused guide explains what surimi is, how its forms affect roll preparation, what “imitation crab” means, which ingredients and allergens to check, and how to buy, store, thaw, and handle it safely.
What surimi is—and what it is not
The U.S. Food and Drug Administration describes surimi as an intermediate processed seafood product used to make foods that resemble crab, shrimp, lobster, scallops, and other seafood. Its guidance states: “Surimi is an intermediate processed seafood product used in the formulation and fabrication of a variety of products that are made to resemble, and be promoted as substitutes for, crabmeat, shrimp, lobster, scallops, and other seafood.” The guidance is available in FDA’s CPG Sec. 540.700, Labeling of Processed and Blended Seafood Products.
Surimi is fish protein. Depending on the formulation, the fish can include Alaska pollock, cod, Pacific whiting, or more than one species. Manufacturers separate and process the fish, blend the protein with other ingredients, and heat-process the mixture into a desired shape. The finished product may be sold frozen or unfrozen.

Imitation crab is therefore a formulated seafood substitute, not a synonym for pieces of crabmeat. A package may contain fish protein plus water, starch, egg white, salt, sugar, flavorings, color, or stabilizers. Some formulations include a crab-derived flavor component, while others may not. The ingredient list, not crab imagery or words such as “crab flavor,” tells you what is actually present.
Choose the form that matches your roll
Surimi is molded and sold in several practical forms. No source cited here establishes that one form tastes better than another, so choose by the way you plan to assemble and eat the roll.
| Form | Best use in sushi or California rolls | What to expect |
|---|---|---|
| Sticks or leg-style pieces | Defined strips or pieces inside each roll | Easy to cut lengthwise, halve, or pull into strands; useful when you want the filling to remain visibly separate from the rice and vegetables. |
| Flakes | Loose filling mixed with mayonnaise or other ingredients | Distributes readily through a mixture and does not require much cutting. |
| Chunks | Chunky mixed filling or larger bites | Provides more irregular pieces; break or chop to the size your roll can contain without splitting. |
| Shreds | Fine, evenly distributed filling | Spreads across the sheet and combines easily with other ingredients, but can be harder to keep in a narrow strip if overfilled. |
| Other molded shapes | Recipes calling for a particular appearance | Check the package directions and texture; the shape may be decorative rather than a different seafood category. |
When sticks are the simplest choice
Choose crab sticks or leg-style pieces when you want one or two identifiable strips in the center of each roll. Their length makes portioning predictable: you can cut them to the width of the nori sheet, split them into thinner strands, or leave them intact for a firmer center. They are also convenient if you plan to place the surimi beside cucumber or avocado rather than mix it into a spread.
When flakes, shreds, or chunks work better
Use flakes, shreds, or chunks for a mixed filling. These forms combine more evenly with a dressing and can be seasoned throughout rather than only on the outside of a stick. Select chunks when you want a more substantial bite; select shreds or flakes when you want a smoother, more uniform mixture. This is a preparation choice, not a claim that the forms differ in quality.

Under U.S. FDA guidance, a fish-protein substitute that resembles crab and is nutritionally inferior to crab is labeled “imitation crabmeat.” The exact wording on a package can vary by product, so read the full common name and the ingredient panel. Ingredients are listed by common or usual name in descending order by weight. The first ingredient generally contributes more by weight than the ingredients that follow, but the list still needs to be read in full for allergy and dietary decisions.

Do not treat the front panel as a complete description
Crab illustrations, a red-and-white appearance, or phrases such as “crab style” describe the intended resemblance, not the actual species composition. Look for the fish species or fish-protein wording in the ingredient list. If the package uses a separate “contains” statement, read that as well. A product can resemble crab while containing no crab ingredient, or it can include a crab-derived flavor component in addition to fish protein.
Use the actual package in your hand
Formulations differ among products and can change over time. Online photographs, recipe pages, and a package from another country may not match the label in your store. For a dietary, religious, or medical decision, use the current package’s ingredient and allergen statements and follow any preparation warning printed there.
Check ingredients and allergens before buying
Surimi is fish-based, so people avoiding fish should not treat it as a fish-free alternative. Other ingredients commonly used in imitation-crab formulas include starch, egg white, salt, sugar, flavorings, color, and stabilizers. Wheat may appear as a starch or other component. The precise combination is product-specific.

In the United States, major food allergens must be declared when present as ingredients. Check both the ingredient list and the “Contains” statement where one is provided. An FDA-published California-roll label example lists Alaska pollock, wheat starch, egg whites, and crab extract. That label demonstrates one formulation only; it is not a recipe requirement for every surimi product. You can view the example in FDA’s Yummi Sushi Labels, California roll example.
Questions to answer from the label
- Which fish species or fish-protein ingredient is listed?
- Does the product contain wheat, egg, soy, milk, or another ingredient you must avoid?
- Is crab, shellfish, or a seafood flavoring included?
- Are there starches, sweeteners, colorants, or stabilizers that matter to your diet?
- Does the package identify the product as cooked, ready to use, frozen, or refrigerated?
- What thawing, refrigeration, and after-opening instructions are printed on this specific package?
If you have a serious allergy, do not rely on a general statement such as “imitation crab.” Manufacturing controls and cross-contact information can be product-specific. Contact the manufacturer when the package does not answer a safety-critical question.

Frozen or refrigerated: make the choice around your use
Finished surimi products can be marketed frozen or unfrozen. Either state can work for sushi preparation if the product is handled according to its label. A refrigerated pack is convenient when you will make rolls soon. A frozen pack can be useful when you want to keep the ingredient longer before preparation, but it requires proper thawing and a package that has remained in good condition.
Inspect frozen packages in the store
FDA’s seafood-safety guidance advises avoiding frozen seafood packages that are open, torn, crushed at the edges, or covered with frost or ice crystals. Damage can expose the contents, while heavy frost or ice crystals can indicate that the product has been stored for too long or has partially thawed and refrozen. Choose an intact package and keep it cold during the trip home.
Follow the package’s thawing directions
There is no single universal thawing or after-opening period established for every surimi product. Use the method and timing printed on the label. If the instructions call for refrigeration, thaw in the refrigerator rather than leaving the package at room temperature. Do not assume that a frozen product can be safely held for the same period as a refrigerated product once it has thawed.
Refrigerate promptly
FDA advises refrigerating seafood at 40°F (4°C) or below when it will be used within two days. Put surimi in the refrigerator promptly after purchase or thawing, and keep it covered so its liquid does not contact ready-to-eat foods. The two-day guidance is practical advice for seafood kept under those conditions; the package’s use-by date and after-opening directions still control for that product.
Prepare surimi safely for sushi
Surimi products are commonly sold cooked and ready to use, according to the Seafood Nutrition Partnership’s overview, “Let Me Tell You About Surimi.” “Ready to use” does not cancel the package instructions, and it does not protect other ingredients from contamination during preparation.

- Wash your hands. Clean hands before opening the package and again after handling any raw seafood.
- Set up separate work areas. Keep raw fish, raw shellfish, and their juices away from cooked surimi, rice, nori, vegetables, and sauces that will be eaten without further cooking.
- Clean tools and surfaces. Wash knives, boards, counters, and utensils between raw-food preparation and ready-to-eat roll assembly.
- Open and inspect the surimi. Do not use a package that is leaking, badly damaged, unusually swollen, or otherwise inconsistent with its label’s condition instructions.
- Thaw or chill as directed. Use the label’s method. Drain excess liquid if the package directs you to do so, but do not rinse unless the instructions specifically call for rinsing.
- Cut or separate the form. Split sticks into strands, slice them into lengths, or portion flakes, chunks, and shreds without leaving the filling at room temperature longer than necessary.
- Assemble the roll. Keep the surimi contained in the center so it does not squeeze out when the roll is tightened. Use a clean knife to portion the finished roll.
- Return leftovers to cold storage. Seal the remaining product and follow the package’s after-opening period rather than inventing a shelf-life estimate.

1Scan for outdated or missing drivers - takes under a minute2Repair Windows errors before they cause bigger problems3Fix the driver behind crashes, sound loss and screen glitches- Decide on the filling style. Pick sticks or legs for defined pieces; pick flakes, shreds, or chunks for a mixed filling.
- Choose the storage state. Select refrigerated or frozen according to when you will prepare the rolls and the space available for safe storage.
- Inspect the package. For frozen products, reject open, torn, crushed, frosted, or heavily crystallized packs. For refrigerated products, choose a sealed package kept cold.
- Read the product name. Confirm whether it is identified as imitation crabmeat, surimi seafood, or another seafood substitute.
- Read every ingredient. Identify the fish species, starches, egg, wheat, flavorings, crab or shellfish components, and any other ingredient relevant to your diet.
- Read allergen and handling statements. Note the “Contains” declaration, thawing directions, refrigeration requirement, and after-opening instruction.
- Buy only the amount you can use safely. If you will make one batch of rolls, a smaller package may reduce leftover-storage decisions.
Match surimi texture to common California-roll fillings
Defined center with cucumber and avocado
Use a stick or leg-style piece when you want the surimi to remain a distinct strip beside cucumber and avocado. Cut the stick to fit the nori, or pull it into a few strands if the roll is narrow. Avoid overfilling: a long, thick center can force the rice and nori apart when you tighten the mat.
Mixed imitation-crab filling
Choose flakes, shreds, or chopped chunks when the surimi will be combined with a dressing. Shreds and flakes produce a more even mixture; chunks preserve larger bites. Add the dressing gradually so the filling remains cohesive rather than watery, and keep the mixture chilled until assembly.
Inside-out rolls
For an inside-out roll, a loose filling can spread during cutting. Shreds or small flakes are easy to distribute in a narrow line, while larger chunks may need to be chopped first. Sticks can still work, but cut them lengthwise so the roll closes without excessive pressure.
Common selection mistakes and how to correct them
Mistake: assuming “crab” means crabmeat
Correction: Read the common name and ingredient list. Surimi is fish protein used to imitate crab; the presence or absence of actual crab must be determined from the label.

Mistake: choosing by color alone
Correction: Red-and-white coloring is part of the familiar crab-like appearance. It does not establish species, freshness, allergen status, or taste.
Mistake: buying a form that does not suit the recipe
Correction: Choose sticks for pieces you can cut or separate. Choose flakes, shreds, or chunks when the filling will be mixed.
Mistake: ignoring wheat or egg
Correction: Check the full ingredient and allergen statements. Surimi formulas can include wheat starch and egg white, as illustrated by the FDA California-roll example, but not every product uses the same ingredients.
Mistake: accepting a damaged frozen package
Correction: Select an intact pack without the open, torn, crushed, frosted, or heavily crystallized condition described in FDA’s seafood-buying guidance.
Mistake: using one universal storage rule
Correction: Follow the product label. FDA’s 40°F-or-below guidance applies when seafood will be used within two days, but it does not replace product-specific use-by and after-opening directions.
Mistake: preparing ready-to-eat rolls beside raw seafood
Correction: Separate raw and ready-to-eat ingredients, wash hands, and clean utensils and counters between tasks.
U.S. labeling and the Canadian distinction
This guide uses U.S. FDA labeling and food-safety guidance. Canadian labeling is a separate jurisdiction. The Canadian Food Inspection Agency explains requirements for fish and fish products, including the use of “surimi” in a common name with appropriate descriptors and the need to identify surimi products that resemble seafood as imitations. See CFIA’s labelling requirements for fish and fish products.
Do not transfer a Canadian naming rule to a U.S. package or assume that an imported product follows the same declaration format. Use the label sold in your market and, when necessary, consult the relevant regulator or manufacturer.
