How to make the stir-fry
The account gives a sequence rather than exact weights, so prepare ingredients to taste and follow the noodle package’s directions where needed.
- Get everything ready. Cook or prepare the noodles and beat the eggs. Flatten the chicken breast, then slice it thinly. Cut the broccoli and mince the garlic. Have the soy sauce, oil, salt, pepper and lime within reach.
- Stir-fry the chicken and vegetables. Heat oil in a wok, add chicken with garlic and broccoli, and stir-fry. Season with soy sauce, salt and pepper, then set the mixture aside.
- Cook the eggs. Add the beaten eggs to the wok and cook them.
- Combine and heat through. Add the prepared noodles and chicken mixture to the eggs. Toss and cook until heated through.
- Finish with lime. Squeeze lime over the noodles before serving.
Why preparation matters
This is a quick-cooking stir-fry, so chopping and measuring while the wok is already hot can make the sequence harder to manage. Lieu emphasizes having ingredients ready and attributes this advice to Ramsay: “Everything needs to be at your fingertips.”

What variations does the article suggest?
These are Lieu’s suggested adaptations, not Ramsay’s original instructions:
- Use chicken thigh instead of breast.
- Marinate the chicken with cornstarch, soy sauce, chicken bouillon powder and rice wine.
- Add sauce around the edge of the wok near the end of cooking.
Does it deliver smoky wok flavor?
