Surimi is processed fish protein, not crab meat. It is commonly made from fish such as pollock, cod or Pacific whiting. However, a finished product sold as imitation crab can include crab extract, crab flavor or other ingredients that trigger additional allergen declarations. Recipes differ, so the only reliable answer for a particular package is in its current ingredient list and allergen statement.
What surimi actually is
Surimi is an intermediate seafood ingredient made primarily from the myofibrillar protein fraction of one or more fish species. In the process described by the U.S. Food and Drug Administration (FDA), fish is minced, washed and mixed with cryoprotectants so the protein can remain stable during frozen storage. Pollock, cod and Pacific whiting are examples of fish that may be used.
At this stage, surimi is fish protein. It is not a chunk of crab, and the word “surimi” by itself does not identify a crustacean ingredient. Manufacturers then formulate the surimi into a finished food. Depending on the product, the recipe can include water, salt, starch, egg white, flavorings and, in some cases, the seafood being imitated or an extract from it.
The mixture is heat processed and formed into the shapes consumers recognize: sticks, flakes, chunks or other pieces. The familiar red-and-white “crab stick” is therefore a prepared food made with surimi, not a block of crabmeat.

Why the package may be called imitation crabmeat
For a U.S. product made primarily from fish protein that substitutes for and resembles crabmeat but is nutritionally inferior, FDA guidance says the product should be labeled “imitation crabmeat.” That document is agency guidance describing FDA’s current thinking; it is not itself a legally enforceable regulation. The labeling term is useful because it distinguishes a fish-based substitute from crabmeat taken from a crab.
The name on the front of the package does not, by itself, answer every ingredient question. A product can be imitation crabmeat and still contain a crab-derived ingredient. Conversely, a product in the same category may use flavoring without listing crab extract. The formulation, not the general product category, determines what is present.
Can imitation crab contain real crab?
Yes, some finished imitation-crab products contain a crab ingredient. An FDA-published SNOWFOX label example lists crab extract in its imitation-crab ingredients and declares shellfish (crab). That example demonstrates why “imitation” should not be interpreted as “guaranteed crab-free.”
It does not establish that every surimi product contains crab. Other manufacturers can use different recipes, and even products with similar names can differ in their fish species, seasonings and allergen declarations. Look for terms such as crab extract, crab flavor or a direct crab ingredient in the ingredient list. Then read the separate allergen statement, where present, for a declaration such as “contains crab.”

A crab flavor term needs to be interpreted from the full label. The word “flavor” alone does not tell you whether the source is actual crab, another source or a formulated flavoring. If you must avoid crab, do not infer the source from the product name or color; confirm it with the manufacturer when the label is not clear.
What allergens are common in surimi?
Fish is the expected major allergen in fish-based surimi. The exact fish should be identifiable from the ingredient information or allergen declaration on a U.S. label. Other allergens depend on the finished recipe.
Fish
Because surimi is made from fish protein, fish is central to the product rather than an incidental additive. A person with a fish allergy should treat surimi as a fish-containing food unless the manufacturer provides reliable information showing otherwise. The package may identify a species such as pollock, cod or Pacific whiting; do not assume that one fish species is used in every brand or product.
Crustacean shellfish
Crab can appear as crab extract, crab flavor or another crab ingredient. When it does, the product may declare crustacean shellfish and specify crab. The FDA label example described above shows this combination in practice. A product without a crab declaration should not automatically be treated as suitable for someone with a severe shellfish allergy if the ingredient information is incomplete or unclear; ask the manufacturer or distributor before eating it.

Egg
Egg white can be used in the formulation of a finished surimi product. Egg is one of the major allergens that must be declared when it is used in a covered food in the United States. Check both the ingredient list and the “contains” statement for egg.
Wheat and soy
Starches, sauces or other formulation ingredients can introduce wheat or soy. These are not inherent to the definition of surimi, so their presence varies by product. A wheat- or soy-free assumption based only on the words “imitation crab” is unsafe; verify the package.
The other major allergens
FDA identifies nine major food allergens in the United States: milk, egg, fish, crustacean shellfish, tree nuts, wheat, peanuts, soybeans and sesame. Surimi recipes do not necessarily contain all nine. The list is a labeling framework, not a universal ingredient list for imitation crab. A multi-ingredient sushi product that includes imitation crab may declare several allergens because of its other components, while a plain surimi package may declare fewer.
How U.S. allergen labeling helps you check a package
FDA guidance says a U.S. label must identify the food source of a major allergen used to make a covered food. For fish and crustacean shellfish, the specific species must be declared rather than only the broad group. In practical terms, a label should identify the fish species and, when applicable, name crab or another crustacean shellfish.

Use the ingredient list to see what is actually formulated into the food. Use the allergen statement as a quick confirmation of major allergens. Neither section should be skipped: an ingredient can be easy to miss in a long list, while the allergen statement may group information in a concise “contains” line.
A step-by-step label check
- Confirm the product identity. Read the full name. “Imitation crabmeat” signals a fish-based substitute under the FDA guidance, while a sushi roll, salad or seafood mix may contain additional ingredients beyond the surimi piece.
- Find the fish. Scan the ingredient list for the species used, such as pollock, cod or Pacific whiting. Fish is the defining protein in surimi, but the species can vary.
- Search for crab terms. Look for “crab,” “crab extract” or “crab flavor.” If crab is listed, check whether the allergen statement identifies shellfish (crab).
- Check egg, wheat and soy. Review the entire ingredient list for egg white, wheat-based ingredients, soy or their named derivatives, then compare the result with the “contains” statement.
- Review the complete major-allergen declaration. Do not rely on the front label, a photograph of a product from another date or a retailer description. Use the package you intend to eat.
- Stop if the information is unresolved. FDA consumer guidance advises: “If you’re unsure about whether a food product contains any ingredient to which you are sensitive, don’t buy it, or check with the manufacturer or distributor listed on the food product’s label first to ask what it contains,” says D’Lima. Contact information is normally printed on the package.
How to compare two surimi products
When choosing between packages, compare the same label elements rather than relying on brand reputation or the color and shape of the sticks.
| Label feature | What to compare | Why it matters |
|---|---|---|
| Fish species | The named fish, such as pollock, cod or Pacific whiting | Fish is the primary protein in surimi, and species-specific declaration is relevant to fish allergies. |
| Crab ingredient | Whether crab, crab extract or crab flavor is listed | Some imitation-crab recipes include a crab-derived ingredient; others differ. |
| Shellfish declaration | Whether the allergen statement specifies crustacean shellfish and crab | It can reveal a crab ingredient that a shopper might overlook in the main list. |
| Additional allergens | Egg, wheat, soy and any other major allergens named | These ingredients vary with the formulation and with foods that contain the surimi. |
| Product scope | Plain surimi versus a sushi, salad or seafood mixture | Other components can add allergens that are not part of the surimi itself. |
Do not generalize from one package to an entire product line. A label example published by FDA shows what one formulation contains; it is not a universal recipe for all imitation crab.

If you are allergic to fish
Surimi is not a fish-free substitute. Its defining ingredient is fish protein, so a fish-allergic person should avoid it unless a manufacturer has specifically verified a different formulation. The named fish species matters because FDA requires species identification for fish allergens on covered U.S. foods.

If you are allergic to crab or other crustacean shellfish
Check for crab extract, crab flavor and the crustacean-shellfish declaration. Because recipes vary, the absence of crab from a product description is not enough evidence. If the label is ambiguous, follow FDA’s advice to avoid the product or contact the manufacturer or distributor listed on the package.
If you avoid egg, wheat or soy
These allergens may be added through egg white, starches, sauces or other ingredients. They are not required parts of every surimi recipe. Read the current label for the exact product and prepared food, especially when imitation crab is an ingredient in a larger dish.
Why the current package matters
Surimi is an intermediate ingredient, and manufacturers can formulate finished products differently. One label may include crab extract while another uses a different flavor system; one may contain egg or wheat while another does not. Retailer listings, older photographs and informal ingredient databases can lag behind a package change. The label on the product in your hands is the most relevant evidence for that purchase.
The practical answer
Surimi itself is processed fish protein, not crab meat. Finished imitation crab can nevertheless contain crab-derived ingredients, and it can also contain egg, wheat, soy or other major allergens depending on the recipe. In the United States, check the named fish species, search the ingredient list for crab terms, read the allergen statement and contact the listed manufacturer or distributor whenever an allergy question remains unresolved.
