A Tribute to Chef Naomi Pomeroy: The Portland Chef Who Made Her Own Way

Self-taught chef Naomi Pomeroy helped shape Portland dining through Beast, later ventures, and an increasingly outspoken concern for restaurant workers.

Naomi Pomeroy, who died at 49 in 2024, was a self-taught chef whose exacting, deeply personal cooking helped shape Portland’s independent restaurant scene. From the communal tasting menu at Beast to later, more casual projects, she kept changing the form of her work—and increasingly spoke about the people and working conditions behind restaurant food.

How a self-taught cook built a career in Portland

Pomeroy grew up in Corvallis, Oregon, and began cooking as a child. In a Portland Monthly profile, she was reported to have made her first recipe at age four and to have learned to make soufflé using her family’s food-stamp rations. Those details offer a glimpse of an early curiosity that would become a vocation, though her path was not through formal culinary school.

She developed her business through catering and home supper-club dinners before moving into Portland restaurants, including Clarklewis. A James Beard Foundation profile recounts the growth of those early ventures as well as the collapse of her first restaurant partnership in 2006. The setbacks were part of a career built through work and risk rather than a straight line to success.

What made Beast distinctive

Pomeroy opened Beast in 2007. The James Beard Foundation described it as a 24-seat restaurant with a six-course tasting menu served at communal tables, bringing French technique together with seasonal produce. Its format made diners part of a shared meal, while the cooking carried a clear point of view: precise, personal, and built around the season.

Beast was not simply a small dining room serving a set menu. Its strong house identity helped make it a locally rooted fine-dining destination. Pomeroy later described its early culture candidly: “When we started in 2007, my sous chef and I had an attitude of ‘it’s our way or the highway,’ and for better or worse, people were attracted to it.” Her recollection captures both the restaurant’s uncompromising character and the harder edges of the management culture she would later question.

The award and the work that followed

In 2014, Pomeroy received the James Beard Foundation Award for Best Chef: Northwest. The award recognized a chef whose reputation had grown from a distinctive Portland restaurant, not from formal training or a conventional career route.

Her work did not remain fixed on the tasting-menu model. Beast closed during the pandemic period, and Pomeroy transformed the space into Ripe Cooperative, a market and all-day bistro with a more casual purpose. She later co-founded Cornet Custard with longtime collaborator Mika Paredes. These projects marked different ways of bringing food to people, rather than attempts to repeat Beast’s format.

For readers who want to encounter her approach in the kitchen, Pomeroy co-authored Taste and Technique: Recipes to Elevate Your Home Cooking with Jamie Feldmar; the cookbook was published in 2016. It offers a route into her cooking beyond the restaurant dining room.

Excellence, labor, and a changing view of restaurant culture

Pomeroy’s legacy includes an evolving view of what excellence in restaurants demands from the people doing the work. In a 2019 James Beard Foundation profile, she reflected on the industry’s future and asked, “I think everyone in this business is asking themselves these longevity questions—about the state of the industry, about the health of our workers.”

In a 2024 Portland Monthly profile, she put the problem more sharply: “The model of a restaurant in the past was, on some level, exploitation—even on the part of owners, self-exploitation.” Her words connect the pressures on workers with the sacrifices owners can also normalize. Coverage of her later career describes her advocacy for restaurant workers and pandemic-era relief; that work belongs alongside her culinary accomplishments, not as a footnote to them.

Those reflections do not erase the demanding early culture she described at Beast. They show a career in which her ideas about how restaurants should operate were not frozen at the moment of her greatest acclaim.

What collaborators remember

People who worked with Pomeroy have emphasized her palate, individuality, and nerve. Mika Paredes, her longtime collaborator, recalled: “Naomi’s food was deeply personal and uniquely hers. Her dishes were never pretentious, simply delicious. She had one of the most exquisite palates I’ve encountered.” Chef Gabriel Rucker remembered her fearlessness, saying, “When I think about what she did for Portland, I come back to this woman who was just fearless.”

Food critic and journalist Karen Brooks offered a wider measure of her influence in Oregon Public Broadcasting’s 2025 retrospective: “If you’ve eaten at a Portland restaurant in the past 20 years, you’ve been touched by Naomi Pomeroy, whether you knew it or not.” It is a community assessment, not a count of measurable impact, but it conveys how Pomeroy’s example reached beyond the restaurants she personally ran.

Her final project and what happened to it

At the time of her death, Pomeroy was developing a French bistro with restaurateur Luke Dirks. She died on July 13, 2024, in a tubing accident on the Willamette River. Oregon Public Broadcasting later reported that the project continued as L’Echelle and opened on May 29, 2025, with Paredes as executive chef. L’Echelle is a posthumous continuation of a project Pomeroy helped develop; she did not live to open or operate it.

Her story is not only one of acclaim, nor can it be reduced to the accident that ended her life. Pomeroy’s contribution was the combination of a singular culinary imagination, the courage to build in her own way, and a willingness to reconsider the labor and culture that make restaurants possible.
