The Clove Club’s official page names McHale as Chef-Patron. It describes a seasonal tasting menu of modern dishes rooted in technique, stripped back to essential elements, and built around produce from the British Isles. Two dates appear in published accounts, and they refer to different stages of the same project. Keep them separate.
The supper-club phase (2010)
World’s 50 Best reports that McHale co-founded The Clove Club with Daniel Willis and Johnny Smith in 2010. That account describes an early supper-club collaboration rather than a permanent restaurant.
The permanent restaurant (2013)
A 2025 Great British Chefs profile says the permanent restaurant opened in 2013. Quote the year as the opening of the restaurant itself, not the start of the founders’ work together.

McHale says: “I always thought we would be a technique-focused restaurant, but I realised that we are a product-focused restaurant, followed by technique and degree of cooking.” The restaurant’s own description puts technique at the centre, so his remark is best read as a ranking of priorities: ingredients decide the dish, and technique serves them.

In the same profile he describes the experience he wants diners to have: “Sometimes, you’re just eating, and it’s nice and you’re chatting.
