In the official material cited here, Nezuko does not eat people—and it does not say what would happen if she did. Her established behavior is to avoid attacking humans and protect them. Any specific consequence of her eating one would be speculation, not a confirmed canon outcome.
What does the story establish about Nezuko?
Nezuko became a demon after Muzan attacked her family. The official anime overview describes Tanjiro’s goal as finding a way to turn her back into a human.
Her official character profile says she does not attack humans and fights to protect them. It attributes this restraint to Urokodaki’s suggestion and Nezuko’s strong will.
Tanjiro states the distinction plainly in an official franchise PDF: 「禰豆子は違うんだ 人を喰ったりしない」—“Nezuko is different. She doesn’t eat people.” The PDF attributes the line to Tanjiro.

How is Nezuko different from demons generally?
The official Shueisha franchise page describes demons generally as beings whose main food is humans. Nezuko’s stated conduct is the opposite: she avoids attacking people and protects them. The general description of demons does not establish that Nezuko follows their usual feeding behavior.

The official sources cited here do not answer that counterfactual. They do not say that eating a human would make Nezuko lose control, gain power, die, become human again, or undergo any other specific change. Those outcomes should not be presented as canon. The supported answer is simply that she does not eat people in the material cited, and the result of the hypothetical is unspecified.
