The Easy Breakfast Princess Diana Ate “Every Day”

Princess Diana’s former chef Darren McGrady said she asked him to make bircher muesli for breakfast “every day.” It is a Swiss-style oat dish often described today as overnight oats: rolled oats soaked overnight in orange juice, then finished with yogurt, fruit, honey and nuts. The routine and the dish’s origin come from McGrady’s recollection, not a surviving daily food log.

What was Princess Diana’s reported breakfast?

It was bircher muesli. In McGrady’s account, Diana encountered the dish at a Swiss health clinic, brought the recipe back, and asked him to prepare it at Kensington Palace. As quoted by AOL/Allrecipes, McGrady recalled: “She stole the recipe, came back, and said, ‘Darren, I want these for breakfast every day.’” The quote and the frequency are his recollection.

HOLA! USA dates the clinic encounter to 1993 and says McGrady served as Diana’s personal chef at Kensington Palace from that year until her death in August 1997. The Kitchn and Marie Claire also report versions of McGrady’s story. These accounts establish how the story is attributed; they do not independently document what Diana ate each morning.

What goes into the reported bircher muesli?

The defining preparation detail is soaking rolled oats overnight in orange juice. The next morning, McGrady’s reported version is mixed with Greek yogurt, honey, lemon juice, grated apple, blueberries and walnuts. This is closer to fruit-and-yogurt muesli than to a simple bowl of oats cooked in liquid.

For a specific two-serving recipe, HOLA lists:

  • 1 cup rolled oats
  • 1 cup freshly squeezed orange juice
  • 1 cup Greek yogurt
  • 1 tablespoon raw honey
  • Half an apple
  • Juice of one lemon
  • 1 cup fresh blueberries
  • Half a cup walnuts
  • Cinnamon, optional

Those quantities are HOLA’s published version, not proof of an exact palace recipe. The Kitchn gives the same broad preparation but differs in details, including identifying Honeycrisp as Diana’s favorite apple. HOLA does not specify that variety in its ingredient list. If following a precise recipe, use the amounts and apple variety attributed to that outlet rather than treating the details as settled.

How to make the overnight-oat version

  1. Combine rolled oats and orange juice in a covered container, then refrigerate overnight.
  2. In the morning, stir in Greek yogurt, honey and lemon juice.
  3. Fold in grated apple and blueberries, then add walnuts. Add cinnamon if desired.
  4. Serve chilled. The recipe is presented as two servings by HOLA.

A milk-based overnight-oat recipe may be a reasonable variation, but it is not the reported preparation described here: the sources specify orange juice as the soaking liquid.

What is known—and what is not

The core answer is consistent across the accounts: McGrady said Diana’s requested breakfast was bircher muesli, with oats soaked in orange juice and fruit, yogurt and nuts added afterward. The Swiss-clinic origin, 1993 timing and “every day” frequency are details of his recollection as repeated by lifestyle and food publications. The available accounts do not establish a complete daily menu or independently verify that she ate the dish every single day.
