What was “East Meets West”?
“East Meets West” was a one-night dinner at Hearth, the restaurant at The Ritz-Carlton, Perth. PerthNow reported that guests were also offered a hands-on demonstration, cooking alongside the two chefs. The event was presented as a Japanese-Australian culinary experience, not as a continuing restaurant menu.
The chefs were Brian Cole of Hearth and Katsuhito Inoue of Chef’s Table at The Ritz-Carlton, Kyoto. Marriott International’s Luxury Group described the dinner as a fusion of Australian open-fire cooking and Western Australian produce with Japanese kaiseki, served in a multi-course format attentive to seasonality, balance and artistry. That wording was an official release statement, not a quotation attributed to either chef.
How the event was scheduled and accessed
PerthNow’s July 9, 2025 report said the dinner was scheduled for August and described an overnight package for August 15. Marriott’s 2025 Luxury Dining Series announcement, hosted by AAP, listed the Perth program for August 15–17, 2025. The published material does not resolve the difference between the reported one-night dinner and the broader dates listed for the Perth program.

PerthNow reported that the package included a studio king room with Elizabeth Quay views for the night of August 15. Marriott said Bonvoy members could bid on the dining events using Bonvoy points. The announcements do not state a points amount or cash ticket price, nor do they establish the final availability, winning bid or event outcome.
How Perth fit into Marriott’s 2025 dining series
Marriott International’s Luxury Group described its 2025 Luxury Dining Series as running from July to September under the theme “Forgotten Flavours.” The series focused on rare ingredients and time-honored techniques reimagined for modern palates, with events across Asia Pacific. The Perth collaboration’s defining idea was a meeting of local produce and open-fire cooking with Japanese kaiseki.

The announcement also described other concepts in the series, including a farm-to-table menu called “Farmers’ Bounty” and an afternoon tea concept. The available announcement does not identify those as part of the reported overnight “East Meets West” package; they should be understood as separate series offerings.
What visitors can explore in Perth now
The dinner is historical, but the hotel and restaurant remain useful reference points for planning a Perth visit. The Ritz-Carlton, Perth’s current experiences page places the hotel at Elizabeth Quay and lists other culinary and cultural experiences, including a private Swan Valley visit with tastings and seasonal dining.
