The recipe serves six and bakes for one hour in a water bath. Whether it is right for you depends on whether you want that soft, custardy middle—and whether you have the dish and time the method calls for.
What Ina Garten calls brownie pudding
The recipe appears on the official Barefoot Contessa site as “Baked Chocolate Pudding”; Food Network lists the corresponding Ina Garten recipe as “Brownie Pudding.” Both credit Barefoot Contessa Back to Basics. The official recipe describes the intended result plainly: “The center will appear very under-baked; this dessert is between a brownie and a pudding.”
That means the underbaked appearance is not, by itself, a sign that you should keep baking it until the center resembles a firm cake. The recipe instead gives a specific doneness cue near the edge.
What you need and how long it takes
The recipe serves six. Its equipment includes a 2-quart oval baking dish, a larger pan to hold the water bath, and an electric mixer fitted with a paddle attachment. It specifies 325°F and a one-hour bake; eggs and sugar are beaten for 5 to 10 minutes before the remaining ingredients are mixed in.

- ½ pound (2 sticks) unsalted butter
- 4 extra-large eggs, at room temperature
- 2 cups sugar
- ¾ cup cocoa powder
- ½ cup all-purpose flour
- Seeds from 1 vanilla bean
- 1 tablespoon framboise liqueur, optional
- Vanilla ice cream, for serving
How to make it
- Heat the oven to 325°F. Butter a 2-quart oval baking dish and melt the butter.
- With an electric mixer and paddle attachment, beat the room-temperature eggs and sugar on medium-high for 5 to 10 minutes, until thick and light yellow.
- Mix in the vanilla seeds and optional framboise, then the cocoa and flour. Add the melted butter after it has cooled.
- Pour the batter into the prepared dish. Set that dish inside a larger pan and pour in the hottest tap water until it reaches halfway up the sides of the baking dish.
- Bake for exactly one hour. To check it, insert a tester two inches from the side: the recipe says it should come out three-quarters clean. The cue is near the edge, not at the center.
- Let the dessert cool and serve it with vanilla ice cream.
Is the center underbaked?
It is supposed to look that way. Garten’s recipe explicitly says the center will appear very underbaked and frames the dessert as a cross between a brownie and pudding. Follow the recipe’s edge-based tester cue rather than judging doneness by probing the middle for a clean result. If you want a uniformly firm, fully set brownie texture, this recipe is aimed at a different outcome.
So, should you make it?
Make it if the appeal is a warm chocolate dessert that combines brownie-like edges with a pudding-like center, and you can accommodate the water bath and one-hour bake. Skip it if you are expecting a conventional, sliceable brownie or do not want to use the specified baking setup. The recipe provides a clear intended texture and method; a personal taste verdict would require actually making and tasting it.
