YouTube documents editing stream metadata, but does not specify that the category field is available for every 24/7 stream setup. To change an archived stream’s audience designation, go to YouTube Studio > Content > Live, select the stream, then choose Edit > Audience.
Change the category on a live or scheduled stream

On a desktop browser, sign in to YouTube Studio and select Create > Go live to open the Live Control Room.

Open the settings for the relevant live or scheduled stream.

Choose Edit and inspect the metadata fields shown.

If the editor includes Category, select the appropriate available category and save the change. YouTube’s help guidance confirms that stream metadata can be edited from the settings page or while scheduling a stream, but does not establish that Category appears in every configuration or enumerate the available choices. Confirm the field is present before proceeding.

Sign in to YouTube Studio.

In the left menu, select Content, then open the Live tab.

Select the archived livestream. You can also select multiple streams if you want to edit them together.

Choose Edit > Audience.

Select Yes, it’s Made for Kids only when the content is made for children. Otherwise, select No, it’s not Made for Kids.

Apply or save the change. For a bulk edit, YouTube’s desktop instructions use Update videos.

Choose the audience designation based on the content
The audience setting identifies whether content is made for kids; it is not a label for a stream’s continuous format or commercial purpose. YouTube allows the designation to be set for a channel or for individual videos, and a video-level choice overrides the channel-level setting. YouTube advises creators not to rely on its automated systems to decide whether content qualifies.
For a new livestream, YouTube also provides an Audience choice in the Live Control Room during setup: after entering basic details and privacy settings, scroll to Audience, choose the accurate option, and continue. YouTube Help: Set your channel or video’s audience

What changes when a stream is marked Made for Kids?
YouTube says the designation affects feature availability. For an individual video or livestream marked Made for Kids, features that may be restricted include comments, live chat and live chat donations, Super Chat or Super Stickers, the notification bell, and personalized advertising. These effects are a reason to understand the setting, not a reason to choose an inaccurate audience designation. YouTube Help: Set your channel or video’s audience

If YouTube has set a video to Made for Kids after detecting an error or abuse, the usual audience controls may not let you change the designation. If you believe YouTube applied it incorrectly, use YouTube’s appeal process rather than assuming the missing or locked control is a Studio error. YouTube Help: Set your channel or video’s audience
