Spoilers through Season 2. At the Season 2 cutoff, Team Black’s reported adult dragon-and-rider roster has seven pairings: Syrax and Rhaenyra, Caraxes and Daemon, Vermax and Jacaerys, Moondancer and Baela, Vermithor and Hugh Hammer, Silverwing and Ulf White, and Seasmoke and Addam of Hull. Earlier pairings, young dragons, and later-season claims need to be kept separate from that active roster.
Team Black’s adult dragons and riders at the end of Season 2
TIME’s Season 2 reporting describes seven Black dragonriders with dragons of combat age at that point in the story. The pairings are:

How the roster changes as the story advances
Arrax and Lucerys: an earlier pairing
Arrax was ridden by Lucerys Velaryon, but the pairing is no longer active after the Season 1 events. Arrax belongs in a historical roster of Team Black, not among the seven active adult rider pairings at the end of Season 2. HBO’s Dragon Index lists the dragon; the Season 2 episode reference provides secondary episode and pairing context.

Dragonseeds add new riders
Hugh Hammer’s claim to Vermithor and Ulf White’s claim to Silverwing change the balance of the Black roster. Seasmoke’s association also changes from Laenor Velaryon to Addam of Hull. These are story developments, not timeless pairings: who rides a dragon depends on where the television series is in its plot.
Young dragons are not combat-age mounts
Tyraxes, associated with Joffrey Velaryon, and Stormcloud, associated with Prince Aegon, are young dragons. They are part of the wider story, but should not be counted as equivalent to the adult combat-age mounts in the Season 2 roster.

What is established about the Season 3 roster?
A definitive current Season 3 roster is not established here. Recent GamesRadar+ Season 3 recap reporting surfaced a connection between Rhaena and Sheepstealer, but that pairing and Sheepstealer’s current status are not sufficiently corroborated to state as fact. Treat Sheepstealer as wild or unresolved for this guide, and check the relevant episodes before assigning a Season 3 rider.
