The idea was articulated by executive chef Steven Ryu in PerthNow’s 13 November 2025 launch report: “The food is meant to flow with the drinks and take you places.” Ryu also said he wanted guests to experience Southeast Asian flavours while “WA’s incredible produce” brought the food back to its local setting. Drinks collaborator Brendan Scott Grey described the cocktail approach as “a homage to Southeast Asia with its feet in the sands of Cottesloe Beach.”

Tigerfish’s official pages describe the bar as walk-ins only. It is the more spontaneous option for a drink or a casual visit; the venue does not promise that a space will be available at any particular time.

The dining area
The dining area is presented as a bookable, table-service experience with an extended menu. Check the official site for the current booking route and availability, since a live reservation link or open tables are not established here. The two formats—walk-in bar and booked dining—are described on the Tigerfish venue page.
Location, hours and events
Tigerfish is located within Cottesloe Beach Hotel at 104 Marine Parade, Cottesloe WA 6011. The hotel’s contact page lists lunch from 12 noon and dinner from 5pm, Monday to Sunday. These are operational details that can change; confirm them on the hotel contact page before setting out.

The hotel also invites enquiries about celebrations and team events through its functions page. The page does not establish event availability or a specific capacity, so an enquiry is needed for those details.

PerthNow reported on 13 November 2025 that Tigerfish was due to open to the public on 21 November. A separate PerthNow report, published 16 November, covered a limited preview held on Friday, 14 November. The preview and announced public opening were distinct events; the reports describe the launch period rather than confirming live status for a later visit.

It gave Albany rock oysters with red nahm jim, crispy rice cake red curry with kaffir lime mayonnaise, and prawn toast spring rolls as launch-era examples. Those dishes should not be taken as a guarantee of what is on the menu now.
In that report, Rutter said the aim was for guests to feel at ease in a venue that also surprises them. He added: “It’s not about prestige. It’s about discovery; it’s all about mood, moment and company.”
