His stated direction was seafood-led cooking built around Western Australian produce, prepared simply and informed by the familiar flavours of classic bistros and brasseries. Who is James Cole-Bowen?
PerthNow reported on 25 November 2023 that Cole-Bowen had been appointed Gibney’s incoming head chef. The WA Good Food Guide’s 2026 award page also identifies him as head chef. In the appointment announcement, Cole-Bowen described the cuisine he wanted to create: “Seafood leaning, I want Gibney’s cuisine to showcase the natural beauty of WA produce — focusing on simplicity while taking nostalgic cues from the great bistros and brasseries of the world from yesteryear,” he said. What is Gibney, and where is it?
Gibney is George Kailis’s upscale restaurant at 40 Marine Parade, Cottesloe WA 6011, beside Cottesloe Beach. Its seaside location was central to the original announcement: PerthNow described a 45-metre oceanfront facade, while Broadsheet’s 2023 preview noted the planned site’s ocean views. What kind of food did Cole-Bowen envision?
The concept pairs seafood and Western Australian ingredients with an unfussy approach and the culinary references of classic bistros and brasseries. Broadsheet’s November 2023 preview described a plan to reinterpret French brasserie food with local ingredients, using a parilla-style grill and charcoal oven in an open kitchen. Its preview examples included veal tonnato sandwiches, vol-au-vent with local snails, Niçoise salad with local seared tuna, sharing tomahawk steak and lemon tart. Those were examples reported ahead of opening, not a guarantee of what is on the menu now. (Broadsheet)

How the idea appeared after opening
In May 2024 opening coverage, Broadsheet highlighted dishes including mussels escabeche and Hiramasa kingfish with crème fraîche tartare and tempura eggplant. Another opening report named suppliers that included The Mushroom Guys, Amelia Park, Stirling Ranges beef, Great Southern Groves olives, Cambray Cheese, Endeavour Foods and Fins Seafood. These reports show how the local-produce ambition was expressed at the time; menus and supplier relationships can change. (Broadsheet; Broadsheet)

What recognition has the restaurant received?
The WA Good Food Guide named Gibney its 2026 Restaurant of the Year and described it as a back-to-back winner. The guide praised Cole-Bowen’s culinary creativity, as well as the wine list, service, seaside views and design.
