What Kevin Bacon says goes into his pancakes
In a 2015 Bon Appétit interview, Bacon described the recipe as banana mashed with an egg and one tablespoon of nut butter, then cooked like a pancake. He called them “power pancakes” and said they did not need syrup.
A 2023 People interview syndicated by Yahoo Entertainment gives a later version as banana, egg and almond butter. It says Bacon makes them on some Sunday mornings for his wife, Kyra Sedgwick, and adds cinnamon. The 2015 account says “nut butter” without naming a type; almond butter belongs to the later account.

How to make the basic version
- Mash one banana in a bowl.
- Mix in one egg and one tablespoon of nut butter. This is the quantity Bacon gave in 2015; the interview does not specify a nut-butter variety.
- Cook the mixture like a pancake. Bacon’s description does not provide a heat setting, cooking time or flipping instructions, so those details are not established as his method.
If you want the later almond-butter version, the 2023 account identifies almond butter and mentions cinnamon, but supplies no precise measurements. Almond butter is a reasonable ingredient to choose for that version; no source establishes a brand endorsement by Bacon.

Optional cooking detail from a separate recreation
For practical technique, Parade’s 2024 recreation uses small dollops of batter in a skillet warmed over medium heat with butter. It adds blueberries when the batter bubbles, then flips the pancakes and cooks them until browned on both sides, about one to two minutes. Those steps and its roughly two tablespoons of almond butter are Parade’s version, not instructions attributed to Bacon.

In the 2023 interview, Bacon explained: “The banana makes it sweet, the almond butter gives you tons of protein and the egg makes it hold together.” That is his description of why he uses the ingredients, not a nutrition analysis. The interviews provide no verified nutrient figures, so the recipe should not be treated as a quantified health claim.
