In an interview with People at the 2024 Food & Wine Classic in Aspen, Garcia said he was pleased with the food he served, while acknowledging that the meal did not feel flawless to him. “I was proud of the food that I put up and I was happy with the way things were turning out,” he said. He added, “I didn’t think that I hit a home run.”
His summary was that he made errors but adjusted as the finale unfolded: “There were mistakes, but I think I was able to pivot.” That is Garcia’s own assessment of his execution, rather than a detailed account of which individual dishes or decisions fell short.

How did the finale unfold?
The reported result came down to Garcia, Jacobs and Miller’s four-course meals. The People account described the contest as close between Garcia and Jacobs and noted that Jacobs’ courses also received compliments. Garcia said simplicity was an important lesson: he wanted to let the fish take the lead instead of adding elements that did not improve it. A seafood restaurant concept
Garcia described Time and Tide as a New York seafood restaurant concept built around global, sustainable and seasonal seafood, with the framing of a classic New York steakhouse. He said he wanted the cooking to showcase fish without unnecessary additions. The interview describes his concept and plans; it does not establish whether the restaurant has since opened or is currently taking reservations.
