Spoilers through the Season 1 finale, “Braciole.” Carmy Berzatto comes back to Chicago to run his late brother Mikey’s sandwich shop, The Original Beef of Chicagoland. By the finale, the shop is closing and a new restaurant called The Bear is on the horizon—but the crew has not yet solved the grief, debt, and working relationships that made The Beef so difficult to run.
Why Carmy comes back to The Beef
Carmy is an accomplished chef who has worked in elite kitchens, but returning home is about more than taking over a struggling business. His older brother, Mikey, ran The Beef and died before Carmy could understand the full extent of his addiction or what was happening in his life. Carmy tries to make the restaurant better partly because he hopes that fixing it might repair what he could not fix in his relationship with Mikey and his family.
That grief sits beneath the season’s daily emergencies. Carmy is trying to bring order and higher standards to a kitchen built around familiar, improvised routines. His intentions do not always match his impact: pressure and frustration can make his attempts to improve the shop another source of conflict.
Who is who in the kitchen and family
- Carmy Berzatto: Mikey’s younger brother and the chef who returns to run The Beef.
- Mikey Berzatto: The late former owner of The Beef. His addiction, debts, recipe, letter, and hidden money shape the season even though he is absent from the present-day kitchen.
- Sydney Adamu: A talented young chef who joins The Beef to work with Carmy. Her ideas challenge the shop’s habits and point toward a different kind of restaurant.
- Richie: Mikey’s close friend, known as “cousin” to the Berzattos. He is protective of the old shop and is dealing with strain in his family life; a voicemail to his daughter’s mother includes an apology for what he said about her father.
- Sugar (Natalie): Carmy and Mikey’s sister. She encourages Carmy to attend Al-Anon and takes part in the restaurant’s transition.
- Marcus: A member of the crew developing his baking and pastry skills.
- Tina: A veteran line cook who initially resists Sydney’s changes but begins to adapt to new kitchen routines.
- Cicero (Uncle Jimmy): The Berzattos’ uncle and Mikey’s creditor.
What changes at The Beef—and what goes wrong
Sydney pushes for new standards
Sydney joins Carmy in trying to modernize the shop’s operations. Her ambition meets resistance, especially from Tina, whose established routines are being challenged. Tina’s gradual acceptance of the new routines, including wearing the proper apron and uniform, is a small but meaningful sign that the crew can change without instantly losing its identity as a workplace family.

The online-ordering effort becomes a crisis
An attempt by Carmy and Sydney to introduce online ordering turns into a disastrous service. Carmy lashes out, damaging Sydney’s trust in him. He apologizes, and Sydney and Marcus return, leaving the partnership bruised but not over. The failure makes their challenge clear: new systems are not enough if the people trying to implement them cannot work together under pressure.
How “Braciole” turns a debt crisis into a new beginning
- Carmy speaks at an AA meeting. He describes trying to fix the restaurant as a way of trying to fix his relationship with Mikey and his family.
- The financial problem remains severe. The shop faces back taxes and $300,000 in unrepaid loans to Cicero, according to TIME’s June 19, 2023 recap, updated December 11, 2023.
- Carmy finds a clue he cannot explain. Records show payments to “KBL Electric,” but he does not initially know what the company is.
- Richie gives Carmy Mikey’s envelope. After a disagreement, Richie finds the envelope behind the staff lockers and passes it to Carmy. It contains a note expressing love, telling Carmy to “let it rip,” and including Mikey’s spaghetti recipe.
- The tomato cans reveal money. Carmy makes the spaghetti, and opening cans of San Marzano tomatoes reveals wrapped cash. The crew opens more cans together and finds the initials KBL. The discovery links the money to the mystery in Mikey’s records and gives Carmy a possible way forward.
- Carmy and Sydney imagine a different restaurant. Their conversation shifts from keeping The Beef going to creating a new concept together. The final sign announces that The Beef is closed and The Bear is coming.
The cash changes the immediate outlook, but it does not erase the work ahead or resolve the crew’s personal tensions. Mikey’s hidden money makes a restart possible; it does not make a new restaurant ready to open.

What the finale sets up for Season 2
The question is no longer whether The Beef can continue unchanged. It is whether Carmy, Sydney, Richie, and the rest of the crew can build a new restaurant together. Hulu’s Season 2 synopsis describes them stripping down the restaurant and managing permits, contractors, menu planning, and the demands of hospitality. That makes the new sign a starting point, not a happy ending: the crew must turn a promising idea into a functioning restaurant while navigating the relationships they carry into it.
One production detail, separate from the plot
The story’s pressure-cooker feeling is matched by the form of “Review,” Season 1’s seventh episode. The Television Academy reports that it was filmed in one continuous twenty-minute take. That is a production detail rather than a plot event, but it helps explain why the episode’s kitchen chaos feels so immediate. The Television Academy feature also quotes creator Christopher Storer describing the series as being about kindness and connecting with people, and says he conceived Carmy as a gifted chef who would learn he cannot do everything alone.

Where to pick up the story
Keep three tensions in mind going into Season 2: Carmy’s desire to improve the restaurant versus the way his choices affect the crew; The Beef’s familiar but dysfunctional routines versus Sydney’s proposed standards; and Mikey’s apparent debts versus the hidden resource he left behind. The finale gives Carmy and Sydney a chance to start again, but the new restaurant still has to be built—and the people building it have to learn how to work together.
