The seafood-led coastal restaurant and bar opened in December 2025 in the former Al Lupo site at 25 Leighton Beach Boulevard, close to his former restaurant. Its name honours his grandmother Pearl and the people who supply the kitchen; its menu is designed to shift with the catch and produce available.
From Bib & Tucker to Pearla & Co
Bridger helped shape Bib & Tucker over 13 years before selling the North Fremantle restaurant in September 2025. PerthNow reported his plans for Pearla & Co on 12 November, with bookings due to open that week and a December launch anticipated. Broadsheet later reported that Pearla opened in December 2025.

The new restaurant occupies the former Al Lupo site, around 90 metres from Bib & Tucker, according to PerthNow. Broadsheet gives its address as 25 Leighton Beach Boulevard, North Fremantle. The location makes the move a return to a familiar stretch of coast, rather than a departure from the neighbourhood where Bridger had worked for years. He told PerthNow, “I’ve spent my life at this beach – it’s like a second home for me.”
What Pearla & Co is
Pearla is described as a modern coastal restaurant and bar, with seafood and local produce at the centre of its cooking. The scale and emphasis differ from the larger Bib & Tucker operation: Broadsheet characterises Pearla as a smaller dining room with more attention to detail. Bridger’s stated aim, in a quote carried by Visit Fremantle, is “simple things done beautifully, the kind of food you want to eat with friends, made with produce you actually care about.”

The name nods to Bridger’s grandmother Pearl. “& Co” recognises the wider group behind a restaurant’s ingredients, including fishers, farmers and other suppliers. PerthNow also noted the play on “pearler.”
A menu shaped by what is available
Pearla’s menu is not presented as a fixed seasonal list set months in advance. Bridger told Broadsheet that catch and availability can change too much for that approach: “Nature’s not like that. The venue will evolve around what we can get.” He also described the cooking as a way of letting good ingredients lead: “You don’t have to do much to beautiful produce. Cook it well, serve it simply, and let it be what it is.”

Broadsheet’s February 2026 feature reported dishes including coal-cooked octopus with XO sauce made from its trimmings; pressed raw tuna with green tomato, jalapeño, coriander and lime; fish with clams and a pil pil made from fish parts; and Exmouth prawns with fermented chilli and smoked butter. These are examples from that feature, not a promise of what will be on the menu at a future visit.
Dry-aged fish and supplier relationships
Broadsheet described two dry-ageing fridges visible in the dining room, kept at one degree with controlled humidity. Bridger said fish is generally hung for seven to ten days, while the team continues to find the best duration for each species. Those details describe Pearla’s reported practice, not general food-safety guidance.

In an interview with WA Good Food Guide, Bridger named Revolution Fisheries in Busselton as a source of fish for the dry-ageing programme, alongside Endeavour Foods, Leeuwin Coast and Fremantle Octopus. He also identified Running with Thieves and Damaged Goods Distilling Co as bar collaborators. These are reported relationships and may change over time.

Visit Fremantle lists Wednesday-to-Sunday service, while Broadsheet’s directory includes a Wednesday listing.
