Ross Mathews calls his pasta-free lasagna variation “lasagn-not.” He has said recipes like it helped him lose 60 pounds, but the available account does not show that this one dinner caused the loss or that it would produce the same result for anyone else.
What is Ross Mathews’s “lasagn-not”?
In a September 2024 Rossipes segment on The Drew Barrymore Show, Mathews presented a lasagna-style casserole that uses spaghetti squash strands in place of lasagna sheets. Danielle DeAngelis’s report for AOL, which identifies EatingWell as the original publisher and was reviewed by dietitian Emily Lachtrupp, M.S., RD, describes a version with ground turkey, broccoli, green olives, marinara, nonfat cottage cheese, and fresh mozzarella. Zucchini is suggested as another vegetable option. The reported seasonings include red pepper flakes, garlic, and Italian seasoning. Read the AOL/EatingWell account.
How the casserole is prepared
- Roast the squash. Halve and roast the spaghetti squash, then scrape the cooked flesh into strands. Mathews suggests pricking a whole squash and microwaving it for 3 to 4 minutes before cutting if it is difficult to prepare raw.
- Cook the filling. Brown ground turkey with the vegetables and seasonings in a skillet, then stir in canned marinara.
- Layer and bake. Put the squash strands in a baking dish, layer the turkey mixture over them, mix in nonfat cottage cheese, and top with fresh mozzarella. Bake at 400°F for about 30 minutes.
- Rest before serving. Let the casserole sit so its juices can settle. Basil or other fresh herbs can be added before serving.
These are preparation details reported in the account, not a fully measured recipe. It does not provide ingredient amounts, serving size, or nutrition information, so those details cannot be reliably inferred from the description.
What Mathews’s 60-pound statement means
Mathews describes the dish as part of an approach to eating food he enjoys while making what he considers better-for-you choices. He said, “You don’t have to give up things you love, but you can make better-for-you choices.” He also explained that he wanted to keep eating the things he loved while making progress toward his goals.
