Garcia’s seafood-centered menu connected his Brooklyn family food memories with flavors and traditions important to him and his wife’s family.
Who won Top Chef Season 21?
Danny Garcia won the season. The finale, titled “Cruising to a Win,” asked the final three chefs to make what Peacock describes as the best four-course meal of their careers. Bravo’s recap names Garcia as the winner and details his menu. Read Bravo’s finale recap; see Peacock’s Season 21 episode listing.
What Danny Garcia served in the finale
Bravo’s recap describes four courses built around seafood, produce and contrasting textures:
- Scallop: Habanero leche de tigre with breadfruit and a nori tuile.
- Smoked mussels: Plantains and cabbage, with smoked mussel mayonnaise and fines herbes purée.
- Spiny lobster: Salsa macha, squash, persimmon and Chaaza sauce.
- “Piragua con leche”: Melon sorbet with avocado yogurt, candied seaweed and a condensed milk stamp.
Garcia later told Salon that the menu’s purpose was to follow a thoughtful through-line tied to significant early food memories. He said the dessert drew on eating desserts with his grandfather after school, and described it as the turning point for him in the finale. These were Garcia’s reflections on his approach, rather than a claim about how the judges reached their decision. Read the July 2024 interview with Garcia.

The family story behind the lobster Chaaza
Garcia said the lobster Chaaza was inspired by food his wife and her Burmese family shared with him. He wanted to bring that Burmese dish into his own culinary vision at a fine-dining level. The course therefore drew on a family connection beyond the Dominican and Puerto Rican traditions in which he grew up.
Seafood was also a natural anchor for the chef. In the same July 2024 interview, Garcia named seafood as his favorite ingredient category and singled out mackerel among the ingredients he likes.

Garcia’s path from Brooklyn to the finale
Garcia’s official biography describes him as a Brooklyn native raised in a Dominican and Puerto Rican household. His career included rising to sous chef at The NoMad in New York, winning the 2016 Ment’or Young Chef Competition, and staging with Team USA at the Bocuse d’Or in Lyon. He later worked at The French Laundry and helped open Crown Shy and Saga under mentor Jamal James Kent.
In 2021, Garcia moved to Hong Kong to reopen Belon as chef de cuisine. After returning to New York, he opened Time and Tide as executive chef and partner. His biography says the restaurant closed in June 2025, so it is not a current dining destination. Read Garcia’s official biography.
