Bacco, a contemporary Italian restaurant in Shenton Park, is the next venture from the owners of Cottesloe’s John Street Cafe. It opened in December 2023 at the former Galileo Buona Cucina site on Onslow Road, pairing Italian culinary influences with native Australian herbs, charcoal and open-fire cooking.
Who owns Bacco in Shenton Park?
PerthNow reported on May 17, 2024, that Alessandro Stoccuto and Sara D’Uzro, owners of John Street Cafe in Cottesloe, opened Bacco. An earlier West Australian report also connected Stoccuto and John Street Cafe to the venture, but named Kate Coleman as his partner. The reports differ on the partnership; their attributions should be kept distinct.

When did Bacco open?
According to PerthNow’s May 17, 2024 report, Bacco opened the previous December: December 2023. The venue followed an 11-month fit-out, the same report said.

Where is Bacco, and what did it replace?
Bacco is on Onslow Road in Shenton Park, at the former Galileo Buona Cucina site. Galileo was known for a traditional, wood-fired Italian identity; Bacco represents a different take on Italian cooking rather than a continuation of that restaurant’s concept.
What kind of food does Bacco serve?
Stoccuto described Bacco’s food as a modern approach to traditional Italian cooking, shaped by his Napoli heritage and local ingredients. The kitchen’s reported methods include charcoal and open-fire cooking, alongside the use of native Australian herbs when familiar Italian herbs are not in season.

One example in PerthNow’s 2024 coverage was tagliatelle with pepper berry butter and scaly flame mushrooms. That dish is a snapshot from the report, not confirmation of what is on the menu now.
Aging and wine details reported in 2024
Stoccuto told PerthNow that the restaurant dry-aged meat in-house for about 20 or 21 days and aged fish for seven days. Those figures describe the owner’s reported practices in 2024, not independently verified measurements. PerthNow also reported that Bacco’s Italian wine list then contained more than 140 wines; that is not a current count.
