How Cattle Farming Affects Climate, Land, and Water

Cattle farming affects climate through methane and supply-chain emissions, occupies pasture and feed land, and uses water both directly and upstream. The scale of each impact depends on geography, production system, and how it is measured.

Cattle farming affects climate through methane from digestion as well as emissions from manure, feed, energy use, processing, and land-use change. It occupies land for grazing and, in some systems, feed crops. Its water footprint includes more than the water cattle drink: growing feed and farm and processing operations also use water. The size and significance of these impacts depend on the production system, the place, and how the impacts are counted.

That last point matters when judging claims about cattle. A total for an entire sector is not a cattle-only figure; a footprint per kilogram is not the same as a region’s total burden; and a litre used in a water-stressed place is not equivalent in impact to a litre used where water is plentiful. A meaningful comparison says what stages it includes and how it accounts for land quality and local water stress.

How cattle farming contributes to climate change

Cattle-related emissions arise at several points in production. The most prominent pathway in the regional systems examined in an eastern Australian life-cycle assessment was enteric methane: methane produced during digestion. Manure also contributes emissions, while producing feed, supplying farm energy, processing products, and changing land use can add further greenhouse gases.

These pathways are connected. Looking only at emissions released directly on a farm can miss emissions associated with growing or transporting feed and with later stages of the supply chain. Conversely, a supply-chain estimate should not be described as if every included emission came directly from cattle or from a single farm. The boundary of the accounting determines what the total represents.

What the global headline estimate does—and does not—say

In its 2013 assessment, the Food and Agriculture Organization (FAO) estimated that livestock supply chains produced 7.1 gigatonnes of carbon-dioxide equivalent per year, or 14.5% of human-induced emissions in that assessment. FAO attributed about 9% of livestock-sector emissions to land-use change and reported that beef and cattle milk accounted for 41% and 20%, respectively, of sector emissions. These are historical estimates for the livestock sector and its commodities—not a current inventory of cattle emissions alone. The year and scope are essential context whenever the figures are quoted. (FAO, Tackling Climate Change through Livestock, 2013)

FAO’s Global Livestock Environmental Assessment Model (GLEAM) helps explain why emissions totals can differ: it uses an assessment approach that includes direct farm emissions and indirect supply-chain emissions, expressed as methane, nitrous oxide, and carbon dioxide. A farm-gate figure and a life-cycle estimate can therefore answer different questions even when both are accurately calculated.

Why methane is important, without being the whole story

Enteric methane is a central cattle-related emissions pathway, but it is not the only one. The eastern Australian study’s finding that it was the largest contributor applies to the systems included in that regional assessment; it does not establish the same share for every cattle system worldwide. Feed choices, manure management, energy use, and land-use change also shape a system’s emissions profile.

For that reason, a single number without a defined boundary can mislead. Ask whether it covers cattle digestion alone, all on-farm sources, or a broader supply chain. Also ask whether the result is a total for a farm or region, or an impact per unit of product. Neither measure replaces the other: a per-kilogram footprint describes production efficiency against a chosen unit, while total emissions describe the overall burden within a defined area and period.

How cattle farming uses land—and why hectares are not interchangeable

Cattle occupy land as pasture animals, and some production systems also require land to grow feed crops. A land footprint therefore depends on more than the number of hectares: it depends on which land is used, its productive capability, and whether pasture or feed production expands into other ecosystems.

Land-use change can add climate impacts when new grazing land or feed crops replace forests. FAO’s 2013 estimate attributed about 9% of livestock-sector emissions to land-use change; that figure belongs to the historical livestock-sector assessment, not to every cattle operation or to a current global cattle-only total. The IPCC describes emissions from agriculture, forestry, and other land use (AFOLU) as including carbon dioxide, methane, and nitrous oxide. It also notes that land-use change can cause localized air, water, and soil pollution. (IPCC AR6 WGIII, Chapter 7)

Area is useful, but land capability changes its meaning

A hectare of highly productive cropland and a hectare of less productive grazing land are not environmentally interchangeable. Reporting only area can make two systems look comparable while concealing differences in what that land can produce and what else it could support. One southern Australian assessment addressed this issue by considering the intrinsic productive capability of occupied land in its land-use footprint method.

That assessment of six beef cattle systems reported land-use footprints of 86–172 m² year-equivalent per kilogram of live weight. The range is specific to the six systems assessed in southern Australia and to the study’s method and product unit; it is not a global average or a simple count of physical grazing area. The authors’ approach adjusted for land’s productive capability, which is why the result should be interpreted as a land-use footprint rather than just hectares occupied. (Ridoutt, Page, Opie, Huang and Bellotti, 2014)

Land comparisons should also distinguish occupation from change. A footprint may quantify land occupied over time, while a separate analysis may ask whether expanding pasture or feed production converted forest or another ecosystem. Those questions overlap but are not identical: an area can be occupied without recent conversion, while land conversion can create impacts beyond the ongoing occupation of that area.

How cattle farming uses water

Water accounting that counts only what cattle drink leaves out important uses. FAO’s GLEAM water accounting includes drinking and service water used at farm and processing activities, along with water applied to irrigated feed crops. Growing feed can therefore be a significant upstream component of a cattle system’s water use, even when that water never reaches the animal directly. (FAO GLEAM)

It is also important to distinguish water volume from water stress. A volume measure counts water used; a stress- or scarcity-weighted measure reflects that consuming a given volume can have different consequences depending on local availability. These metrics answer different questions. A large volume in a water-abundant region is not automatically equivalent in local impact to a smaller volume where supply is constrained.

A regional example of stress-weighted water use

A study of eastern Australian beef systems reported stress-weighted water use ranging from 8.4 to 104.2 litres H₂O-equivalent per kilogram of live weight. In those systems, regional water stress influenced the indicator more than freshwater volume alone. Results also varied with climate, water-supply efficiency, and irrigation. This is a study-specific range for the assessed eastern Australian systems—not a global cattle average, nor a direct measure of litres of drinking water per kilogram. Water availability can change as climate and hydrological conditions change. The IPCC notes that livestock water availability may decrease in some places as runoff and groundwater conditions shift. It also cites a study estimating that direct cattle water use could rise by 13% under a 2.7°C temperature increase in a subtropical region. That estimate concerns direct cattle water use in a regional context; it is not a global forecast of cattle-sector water demand. (IPCC AR6 WGII, Chapter 5)

How to compare cattle systems fairly

Before comparing farms, regions, or production methods, check that the figures refer to the same kind of impact and cover compatible boundaries. Apparent differences may reflect the accounting method as much as the production system.

  • Supply-chain boundary: Is the figure farm-only, or does it include feed and other upstream and downstream stages? GLEAM includes direct farm and indirect supply-chain emissions in its stated emissions boundary. Water accounting also includes irrigated feed crops and farm and processing uses.
  • Functional unit: Is the result a total for a farm or region, or an impact per kilogram of product? The cited Australian land and water studies report per-unit results, using live weight as the product unit.
  • Water measure: Is it a volume of freshwater, direct water use, or water use weighted by local stress? These values should not be treated as interchangeable.
  • Land measure: Is it occupied area alone, or does the method account for productive capability or land quality? Area-only comparisons can conceal important differences between land types.
  • Geography and production system: Climate, irrigation, feed systems, water-supply efficiency, and management influence results. A regional sample should be presented as regional evidence, not as a universal cattle average.

A sound comparison makes each of these choices visible rather than compressing them into a single score. The available evidence here does not establish one current, globally comparable cattle-only figure that combines climate, land, and water impacts. Climate, land, and water indicators also measure distinct effects, so combining them requires explicit choices about how unlike impacts are weighted.

What assessment tools can tell us

GLEAM is designed to assess livestock systems across environmental indicators rather than isolate one farm activity. FAO describes it as a tool for policymakers, researchers, and project teams to assess environmental performance and identify pathways for reducing impacts and improving natural-resource efficiency. Its tools and data page describes GLEAM-X assessments of animal husbandry, herd management, feed systems, manure management, energy use, and post-farm emissions. It also describes the ability to quantify modeled changes in soil-carbon sequestration associated with improved grazing management.

Those are assessment capabilities, not guarantees that a particular management change will deliver the same outcome everywhere. Soil, climate, grazing conditions, and the existing system affect results. A model can help organize a comparison and estimate how specified conditions or interventions change indicators; it does not eliminate the need to state assumptions or explain the place and system being assessed.

What to take from the evidence

Cattle farming’s environmental effects are real but not captured by one universal number. Methane from digestion is an important climate pathway, alongside emissions from manure, feed, energy, processing, and land-use change. Land impacts depend on both occupation and whether land conversion occurs, as well as the capability of the land being used. Water impacts depend on feed and other uses in addition to direct farm needs, and on the scarcity or stress of the region where water is used.

The strongest way to read a cattle-impact claim is to ask what it counts, what product or area it refers to, and where the production occurs. Historical global livestock-sector figures, regional Australian footprints, and model assessments each offer useful evidence—but they answer different questions and should not be presented as if they were the same measurement.
