Casu marzu is a traditional Sardinian sheep-milk cheese deliberately colonized by cheese-fly larvae. Their feeding transforms the cheese into a soft, tangy, aromatic cream. The headline calling it “the most dangerous cheese” traces to a claim attributed to Guinness World Records in a 2013 Sardinian regional bill proposal—not to a verified safety ranking. Food-safety concerns are real, but the available sources do not establish a quantified illness risk or confirm that every serving contains live, jumping larvae.
What is casu marzu?
Casu marzu is a Sardinian cheese made from sheep’s milk, generally using pecorino and often fiore sardo as its base. Slow Food describes it as a seasonal product made across Sardinia, particularly in Nuoro province. Its name is associated with the cheese’s distinctive larval production process.
Rather than treating the larvae as accidental contamination, traditional producers deliberately allow cheese flies (Piophila casei) to colonize the cheese. As they feed, the interior breaks down into a creamy, tangy and aromatic mass. Why are maggots part of the cheese?
The larvae’s feeding changes the cheese’s texture and flavor; they are central to the traditional method, not a garnish added after production. A 2010 controlled study compared holed-paste and firm-paste sheep-milk cheeses exposed to Piophila casei. It found that the holed-paste batches were colonized more readily and showed more intense proteolysis and lipolysis—processes that break down proteins and fats—than firm-paste batches. The researchers sampled at 0, 10, 30, 60 and 90 days, and reported that microbiological parameters were strongly affected by experimental process conditions. That experiment helps explain how larval activity can alter a cheese, but it was not a consumer illness study and does not establish the safety of ordinary, uncontrolled production. Nor do the inspected sources verify a particular jumping distance or show that every serving is presented with live larvae.
Is casu marzu dangerous?
Slow Food warns that swallowing live larvae may allow them to persist in the digestive system and injure the intestines. It also says European health-safety standards prohibit marketing these cheeses. That is a reported hazard, not a quantified estimate of how often harm occurs: the sources reviewed here provide no consumer illness rate or population-level risk figure. Where did “the world’s most dangerous cheese” label come from?
A Sardinian Regional Council bill proposal dated 23 October 2013 says Guinness World Records’ 2009 edition had assigned casu marzu the title “the most dangerous cheese.” The proposal disputes that label and argues for protecting Sardinian food traditions. The original Guinness entry and its ranking method are not independently verified by the sources available here, so the phrase should be understood as an attributed headline claim—not an established comparison of cheese-related risks. The proposal’s arguments about the cheese’s properties and safety are advocacy in a proposed bill, not an independent risk assessment or regulator’s finding. It should not be treated as proof that the cheese is safe.

No. Sardinia’s regional government explains that its traditional-products list covers foods whose production, preservation and aging methods have been established for at least 25 years. Cultural recognition of a tradition is not the same as authorization for ordinary retail marketing.
