Nobu Matsuhisa dined at Gibney in Cottesloe on Wednesday 1 May 2024, days after the restaurant opened. PerthNow reported the visit on 8 May 2024. According to the report, restaurateur George Kailis invited Matsuhisa to Gibney, and Matsuhisa’s team had asked to meet Kailis there. The report does not document a formal menu review or any endorsement of the restaurant by Matsuhisa.
What was reported, and when
PerthNow published its report on 8 May 2024. It said Matsuhisa dined at Gibney on the Wednesday immediately before publication, which was 1 May 2024. The report is a contemporaneous account from the time, and it is the only published account of the dinner that this article relies on. Details of the meal below come from that report.
Who arranged the visit
The report attributes the two sides of the arrangement differently. Restaurateur George Kailis invited Matsuhisa to Gibney. The same report says Matsuhisa’s team had requested to meet Kailis at the restaurant. So the invitation is credited to Kailis, and the meeting request to Nobu’s side. The report does not say which came first.
What the group ate
PerthNow lists the following dishes from the meal:
- Pacific oysters
- Mussel escabeche
- Western rock lobster
- Parrilla-grilled Sugarloaf cabbage
- Woodfired broccolini
This is the list the report names, not a full record of everything ordered. The report calls the evening a taste test. That is the purpose the report gives for the meal, and it is not evidence of a documented review.

PerthNow reproduces several quotations. They are the newspaper’s published wording, and they are presented here with that attribution.

- Matsuhisa ahead of his Australian trip, as quoted by PerthNow: “I can’t wait to return to Australia. It is a place very close to my heart and I love visiting my team and local suppliers.”
- Kailis on the venue’s aim: “We want to create a destination dining venue of significance”
- Kailis on the experience: “You’ve got a team of local artisans preparing your food. You’ve got the best sommeliers in the state. You’ve got the best wait staff in the state.”
The Kailis remarks are the restaurateur’s own assessments of his venue, and the report offers no independent check on them.

What the visit does and does not establish
- Established: Matsuhisa dined at Gibney on 1 May 2024, as reported by PerthNow on 8 May 2024.
- Established: Kailis invited him, and Matsuhisa’s team requested the meeting.
- Not established: a formal menu review, a restaurant endorsement, or any official approval of Gibney by Matsuhisa or Nobu.

Gibney today
The venue details below come from Gibney’s official website and menu page as they read when this article was written. They describe the restaurant now, not its state in May 2024.
- Address: 40 Marine Parade, Cottesloe WA 6011, overlooking Cottesloe Beach.
- Format: a sophisticated brasserie and grill with formal service, offering main dining, terrace dining and a bar.
- Service days and booking: open for lunch and dinner seven days a week, accepting both reservations and walk-ins.
- Concept: drawn from old-world brasseries and steakhouses, with an emphasis on Western Australian producers, seafood, steak, homemade pasta, luxurious snacks and a caviar bar.
Head chef James Cole Bowen describes the approach on the official menu page: “We’ve drawn inspiration from the great bistros and brasseries from the past by remaining true to what has come before. Classic presentations, sauces and flavour combinations bring Gibney into the present and beyond.”

The official homepage also states that Gibney won the West Australian Good Food Guide’s Restaurant of the Year for 2026, its second consecutive year. That is a claim the venue makes on its own website. It is not an award connected to the May 2024 dinner, and it should be checked against the Good Food Guide’s own listing.

Nobu Perth is a different restaurant. Its official contact page places it at Crown Perth, Great Eastern Highway, Burswood. Its official menu lists dishes including Yellowtail Jalapeño and Black Cod Miso, and states that Nobu cookbooks are available for purchase. The menu does not name a specific edition.

A Crown Resorts announcement dated 26 February 2026 describes a later Australian visit by Matsuhisa, including a Crown Perth event on 10 March 2026. That trip was separate from the Gibney dinner, and the event date has passed.
