Which wedding you mean
The question usually refers to one of two Nintendo titles. The plots share a theme, a bridal costume and a forced vow, but they are separate stories with different people behind them. Check which game you are thinking of before you look for a motive, because the answer changes with the game.

Super Paper Mario: a wedding planned by Count Bleck
In Super Paper Mario (Nintendo’s Japanese Mario history page lists its Japanese release as April 19, 2007), the marriage is not Bowser’s project. The official plot summary describes Peach waking up in bridal clothing, with Bowser beside her in groom’s clothes. She is made to say the vows against her will. At that point a mysterious power called the Chaos Heart appears. The ceremony’s planner is Count Bleck.
So the wedding happens as part of Count Bleck’s plan. Peach does not choose it, and the official description does not present it as a romance between Peach and Bowser. If you are looking for Bowser’s personal reasons in this game, the official summary does not supply them.

Super Mario Odyssey: Bowser’s own attempt
In Super Mario Odyssey, Bowser is the one trying to marry Peach. Nintendo’s character material describes Peach as the frequent target of Bowser’s kidnapping schemes, and this wedding fits that pattern. It is a forced marriage plot. Peach is not presented as agreeing to it, and the game’s wedding is an attempt to take her, not a shared decision.
Nintendo’s official Bowser and Peach amiibo pages confirm the wedding theme and the costumes, but they do not explain Bowser’s motive in any broader sense. Treat any reason you read beyond “he wants to take Peach as his bride” as the writer’s guess rather than something Nintendo has stated.

What the official sources do not establish
Nintendo’s official pages do not name a creator or representative who explains Bowser’s reasons for wanting to marry Peach, and they do not provide a franchise-wide explanation. They also do not establish that the weddings carry into any lasting marriage across Mario continuity. The reasonable reading is narrower: in each game, the wedding is a plot device tied to that game’s villain.

The Bowser and Peach wedding amiibo
Nintendo sells a Bowser (Wedding Outfit) amiibo as part of the Super Mario Odyssey series, with a release date of October 27, 2017, according to its official detail page. The Peach (Wedding Outfit) amiibo, according to Nintendo’s official amiibo page, can grant a Life-Up Heart in Super Mario Odyssey and unlock a bridal gown costume. These figures connect to the wedding theme, but they say nothing about why the characters are marrying. This article did not verify current prices or stock, so check a retailer before buying.
