The Tom Cruise cake is Doan’s Bakery’s White Chocolate Coconut Bundt Cake: a coconut Bundt studded with white chocolate and finished with cream-cheese frosting and toasted coconut flakes. The bakery has not published its formula. Home recipes online are independent copycats, so they can match the cake’s general profile but cannot be confirmed as the bakery’s own recipe.
What the name refers to
“Tom Cruise cake” is a nickname for Doan’s Bakery’s White Chocolate Coconut Bundt Cake. Reporting associates the cake with Tom Cruise’s holiday gifts to friends and colleagues. The name is not an official product title, so when you search for a recipe you will find both the bakery’s product and many home versions that borrow its name.
According to a report quoting bakery co-owner Doan, the cake was developed around the time the business opened in 1984, and it has been made for cafes, restaurants, and caterers. Doan’s quoted remarks put the cake at roughly 25 years old, which is a reminder that recollections of this kind are approximate.

- A cream-cheese frosting.
- A finish of toasted coconut flakes.
Those four elements are the reliable definition of the cake. Quantities, pan size, and timing are not, and they differ from one home recipe to the next.

How to bake a home version
Choose one recipe and follow its pan, oven, and timing together. Mixing a pan size from one version with a bake time from another is the most common way to end up with a cake that is undercooked in the middle or overfilled in the pan.

- Pick one recipe. Decide whether you are following the Cooks.com version or the Plain Chicken version before you buy ingredients.
- Prepare the pan. For the Cooks.com version, grease and flour a 10-inch Bundt pan. For the Plain Chicken version, use a 15-cup Bundt pan.
- Set the oven. Preheat to 350°F for the Cooks.com version or 325°F for the Plain Chicken version.
- Bake for the stated time. The Cooks.com version gives about 1 hour 25 minutes. The Plain Chicken version gives a longer estimate, so use its own timing and its own doneness test rather than the shorter figure.
- Cool in the pan. The Cooks.com version calls for 20 minutes before turning the cake out.
- Frost and finish. Once the cake has cooled, apply the cream-cheese frosting and add the toasted coconut flakes.
A stand mixer is optional in the referenced recipe; a hand mixer or spoon works for the batter. The tools that matter most are a Bundt pan of the size your chosen recipe specifies, white chocolate, and sweetened flaked coconut.
Adjusting a recipe
White chocolate
The Plain Chicken version notes that finely chopped white chocolate can be replaced with an equal amount of white chocolate chips. The Cooks.com version uses chips, so the swap is a matter of texture: chopped pieces give irregular chunks, while chips hold their shape more evenly.

Pan size
If you use a smaller pan than the recipe specifies, do not fill it to the same level. The Plain Chicken version warns against overfilling a smaller pan, and the same logic applies to any Bundt pan that holds less batter than the one the recipe was written for.
Mixing versions
Do not blend ingredient quantities, pan capacity, temperature, and timing from different recipes. Each version was written as a set, and the set is what you can trust.

Where the bakery version comes from
The quotations that describe the cake’s origin come from a report quoting Doan, who is identified as a co-owner of the bakery. He is quoted as saying: “The funny thing is, we’ve been doing that cake for a quarter of a century,” and “It’s just a unique cake that we dreamt up 25 years ago and we’ve always done it for different cafes, restaurants and caterers.”
Unpeeled Journal reports that its recipe author bought the original cake and worked toward a copycat through several test bakes. Those purchase and testing details are the author’s own account and are not independently verified here. The same article quotes the bakery-supplied Goldbelly description, which says “This package serves 12-16 people and includes a White Chocolate Coconut Bundt Cake” and that “Each bundt cake measures approx. 10″.” The product description also calls the cake “Doan’s most famous creation.” These are sales descriptions, not confirmed current purchase details.
Ordering the original or baking at home
The two routes differ in provenance, effort, and what you can verify.
| Factor | Original Doan’s cake | Home copycat |
|---|---|---|
| Provenance | Made by Doan’s Bakery; formula not published in the sources reviewed | Independently published recipe; not endorsed by the bakery |
| Size | Goldbelly description: package serves 12–16 people and includes a Bundt cake of approximately 10″ (from a 2026 Unpeeled Journal page update quoting the sales listing) | Set by the recipe: 10-inch Bundt in one version, 15-cup Bundt in the other |
| Effort | No baking required | About 1 hour 25 minutes of baking in one version, longer in the other, plus cooling and frosting |
| Taste and texture | Not tested here | Not tested here; no cited comparison establishes that a copycat tastes identical |
| Price, stock, and shipping | Not verified for the current date | Depends on your local grocery prices |
What is and is not established
- The bakery’s official recipe has not been located in the sources reviewed for this article, so no home version can be presented as the exact formula.
- Current Goldbelly listing details, prices, and shipping availability were not verified.
- The history of the cake comes through press reporting that quotes Doan, not from a bakery statement made directly to this site.
- This article does not include a side-by-side taste test of the bakery cake and any home version.
What you can rely on is the profile: a coconut Bundt with white chocolate, cream-cheese frosting, and toasted coconut flakes. Choose one published recipe, match its pan and oven, and judge the result against the cake’s description rather than against an assumed identical match.
