In a December 2023 profile, PerthNow described Ryan Ebbs as both head chef at Perth’s Rosemount Hotel and guitarist in the punk band Belgravia. The “rock star” in the headline is figurative: the article connects his professional kitchen work with his life on stage, but does not establish whether either role remains current in 2026.
From American kitchens to Perth venues
Jessica Evensen’s PerthNow profile, published December 23, 2023, reported that Ebbs had moved from the United States to Perth eight years earlier. It traced his hospitality work through Crown’s Merrywell, Prince Land in the CBD and Carousel’s Waverly Brewhouse before identifying him as the Rosemount Hotel’s head chef. The eight-year interval is the profile’s wording; it does not give a precise migration date.
At the Rosemount, Ebbs described a food direction centered on local produce and reliable execution. “We’re just trying to bring really great local produce and really consistently executed food,” he told Evensen. He also framed the venue as a neighbourhood place with regulars in North Perth, saying the aim was to make the food offering “really consistent and really awesome.”
His ambition, as quoted in the profile, was for people to think of the Rosemount “not only for music but for the food as well.” Those remarks document Ebbs’s stated priorities in 2023, rather than an independent assessment of the venue’s food or its current menu.

How Belgravia came together
The profile reported that a friend introduced Ebbs to Jordan Paul, Brody Walsh, Hammer Wheelsby and Brock Jefferies after discovering he played electric guitar. The group formed Belgravia, with Ebbs on guitar. PerthNow said the band had headlined local gigs, released three singles on Spotify and appeared on Triple J Unearthed by the time of publication. Those are the profile’s 2023 details, not a current release count or confirmation of the band’s present activity.
Ebbs described the musicians as working professionals who wanted their gigs to be worthwhile while keeping music enjoyable: “We are all working professionals so we try to make sure that it’s worth our time, but at the same time we’re having fun.”

What the profile does—and does not—establish
The Rosemount story is a portrait of two pursuits as reported in 2023: Ebbs’s work leading a hotel kitchen and his guitar role in a Perth punk band. The profile supplies his own account of the food direction he wanted for the venue and reports a snapshot of Belgravia’s activity at that time. It does not establish his employment, the band’s current lineup or activity, present-day menu details, or current event listings.
PerthNow also mentioned a planned New Year’s Eve 2023 event at the Rosemount, “A Buckin’ Good Party,” featuring Sly Withers, Noah Dillion and Siobhan Cotchin. The reported $49.99 ticket price belonged to that historical event and is not a current offer.
