Shane Osborn was born and raised in Perth, Western Australia, and became the chef leading London’s Pied à Terre kitchen when it earned its second Michelin star in 2003. The stars belonged to the restaurant, not Osborn personally. His career later took him to Hong Kong, where he opened Arcane in 2014.
How a Perth upbringing led to a London kitchen
Osborn’s professional cooking began close to home: his mother was a caterer, and he learned from working with her, according to the Hong Kong General Chamber of Commerce. The MICHELIN Guide also identifies Perth as his hometown and describes his move to London.
In London, Osborn worked at L’Oranger, whose team earned a Michelin star in 1996. He later joined Pied à Terre and led its kitchen as the restaurant rose to two stars in 2003. That distinction matters: Michelin stars rate restaurants, and the 2003 milestone was Pied à Terre’s achievement under Osborn’s leadership—not a personal award to him. The MICHELIN Guide’s account of Osborn’s career and its later profile of Arcane recount these milestones.
From London to Hong Kong
Osborn moved to Hong Kong in 2011 and opened Arcane in 2014. The restaurant received its first Michelin star in the MICHELIN Guide Hong Kong Macau 2018 edition. The London and Hong Kong milestones are different: Pied à Terre reached two stars while Osborn led its kitchen; Arcane opened under his direction and later earned one star.

Osborn also opened Cornerstone in 2019. About six months later, it entered the MICHELIN Guide’s 2020 Bib Gourmand selection, recognition distinct from a Michelin star. A 2021 Guide profile also associated him with Moxie as an all-day dining venue. These are historical milestones; the cited accounts do not establish the venues’ current status or ratings.
The dish that captures Arcane’s approach
Arcane’s sautéed potato gnocchi is identified by the MICHELIN Guide as one of the restaurant’s signature dishes. The method starts with baked potatoes, mashed and combined with flour, salt and Japanese eggs. The gnocchi are sautéed in butter until crisp and golden outside while remaining soft and fluffy inside. The restaurant’s versions have changed with seasons and local sourcing; one variation described by the Guide pairs them with Chinese yellow wine, mushrooms and cream.

In a 2020 MICHELIN Guide interview, Osborn described the aim as “a very light potato gnocchi” pan-fried to become “very crispy on the outside and fluffy inside.” In 2024, he said the challenge was less technical than a matter of “getting the textures and the flavours and the balance right.” His account of Arcane’s ethos in 2020 was similarly direct: “At Arcane, we’re not trying to prove a point, not trying to show off, it’s just good food in a good environment with proper hospitality.”
The dish’s appeal is its balance rather than elaborate technique: a crisp surface, tender center and combinations that can shift with seasonal ingredients. For a home cook trying the basic method, a potato ricer is an optional way to mash cooked potatoes evenly; the Guide does not identify a particular tool or say Osborn uses one.

Sustainability and the limits of the record
A 2021 MICHELIN Guide profile described Osborn as a sustainability advocate, noted his interest in plant-based cooking and sustainable sourcing, and identified him as president of sustainability consultancy Food Made Good Hong Kong at that time. Those details are a dated snapshot, not confirmation of his current role.
The documented story is a progression from Perth to London and then Hong Kong, with restaurant recognition attached to specific places and years. The cited profiles establish past Michelin distinctions and selected career associations; they do not verify every restaurant’s present operating status, current rating or Osborn’s current involvement.
