The recipe that best matches Ina Garten’s pea soup is Fresh Pea Soup, a quick soup made with fresh or frozen peas, leeks, onion, mint, and chicken stock. Food Network’s ingredient list specifies:
- 2 tablespoons unsalted butter
- 2 cups chopped leeks
- 1 cup chopped yellow onion
- 4 cups chicken stock
- 5 cups freshly shelled peas or 2 ten-ounce packages frozen peas
- 2/3 cup loosely packed chopped fresh mint
- 2 teaspoons kosher salt and 1/2 teaspoon freshly ground black pepper
- 1/2 cup crème fraîche and 1/2 cup chopped fresh chives
- Garlic croutons, for serving
The recipe explicitly offers frozen peas as an alternative to fresh peas. It says frozen peas cook quickly: “Frozen peas will take only 3 minutes.”

How the published method works
- Soften the leeks and onion in butter.
- Add the chicken stock and bring it to a boil.
- Add the peas and cook until tender. The instructions give frozen peas about three minutes.
- Take the pot off the heat, then add mint, salt, and pepper.
- Purée the soup in batches in a countertop blender.
- Whisk in the crème fraîche and chives, then serve with garlic croutons.
The recipe directs cooks to blend in batches; it does not specify a blender brand or model.
Is this recipe vegetarian?
