Ham’s place on many Southern Easter tables has a practical explanation: pork slaughtered in autumn could be salted, cured through winter, and ready to eat in spring. That timing made ham a fitting celebratory food, but it does not establish a single origin story. The tradition also grew from the South’s deep history of pork production and curing, shaped by many communities—including enslaved workers whose expertise was exploited under slavery.
Why ham suited an Easter meal
Before refrigeration, curing helped preserve meat beyond the season when an animal was slaughtered. Autumn-slaughtered pork could be salted and aged over winter, making it available in spring. A 2011 food-trade feature presents that seasonal timing as an explanation for Easter ham; a 2026 scholarly review of country ham describes the broader history of seasonal salting and aging. Together, they make the explanation plausible, not proof that this was the sole reason ham became associated with Easter or when the custom began. There is no evidence here of a first Easter ham meal, a precise date when the practice began, or a uniform custom across the South. Ham was not a religious requirement; households’ holiday foods have varied by community, resources, and family tradition.
Why pork became part of Southern foodways
The seasonal explanation makes more sense in a region where pork curing was already well established. The Southern Foodways Alliance describes a “ham belt” stretching across Kentucky, Tennessee, North Carolina, and Virginia. It traces Southern curing traditions to Native American and early European skills, and explains that salt—and sometimes smoke—helped make meat shelf-stable. Country ham also belongs to a broader history of preservation. The 2026 Animal Frontiers review describes dry-cured country ham as rooted in European curing practices, notes pork’s importance as a protein source for colonists, and discusses family production before commercialization. That history helps explain pork’s presence in the region; it does not by itself explain the Easter custom. Animal Frontiers (2026, indexed abstract information).
The history of ham includes enslaved workers’ labor and skill
Any account of Southern pork must include the knowledge of enslaved butchers and cooks—and the coercion that compelled their labor. Smithsonian curator Christopher Wilson describes enslaved workers slaughtering hogs in the Lowcountry and preserving pork, including hams for sale. On some large plantations, he reports, an estimated 20,000 or 30,000 pounds of pork could be needed to sustain enslaved workers; that figure is a historical example, not an estimate for the South as a whole. Wilson reproduces formerly enslaved man Robert Shepherd’s recollection of the meat: “Nobody never had no better hams and other meat.” The words speak to the quality of the food as Shepherd remembered it; they do not make the system that produced it benign. The labor and expertise of enslaved people belong in Southern food history without romanticizing their exploitation. Smithsonian Magazine (2016).
Black cooks also shaped Southern cooking and hospitality more broadly. Historian Kelley Fanto Deetz discusses that influence while noting the gaps and biases in surviving records. A living tradition, not an unchanged one
Virginia’s Edwards family ham business offers one documented example of continuity alongside change. Sam Edwards I began selling ham sandwiches on the Jamestown–Surry ferry route in 1925 and subsequently started the business. A later generation, Sam Edwards II, moved curing from ambient rooms to temperature-controlled rooms. This history shows how ham production can adapt over time; it does not prove that Easter ham was served in every household or that the holiday custom remained unchanged.
