Douzaine was a temporary oyster bar opened by friends Jacqui Snyder and Odetta Davison in a previously vacant building on Cantonment Street, Fremantle. Its original run lasted from January to March 2024, with a focused offer of Albany rock oysters, bread with whipped butter and BYO drinks. A Fremantle Biennale listing records a later Douzaine oyster event in November 2025, but does not show that a permanent venue reopened.
What Douzaine was
Douzaine was a short-run, small-scale oyster bar rather than a permanent restaurant. Snyder, a teacher, and Davison, a doctor, created the project as a passion venture alongside their other work. They set it up in a previously vacant building on Cantonment Street, bringing guests close to the preparation and service.
In a January 19, 2024 report, PerthNow described the founders as being in their first week and expecting the bar to operate for about three months. WA Good Food Guide later identified the run as January to March 2024. PerthNow’s opening-period account and WA Good Food Guide’s 2024 feature describe the original project.
What it served and how it worked
The menu was deliberately brief: Albany rock oysters by the half-dozen or dozen, plus bread with whipped butter. The West Australian described the bread as Hunter Bread. Guests could bring their own drinks. WA Good Food Guide reported historical prices of $20 for half a dozen oysters and $40 for a dozen during the 2024 run; those are not current prices.

PerthNow reported that the opening-period hours were Thursday through Sunday from 2:30 pm. Those details refer to the 2024 pop-up, not a current schedule. The West Australian’s coverage describes the oyster and bread pairing, while Visit Fremantle’s listing presented the outing in the context of BYO wine.
The idea behind the pop-up
Snyder traced the idea to a trip to Sète, a southern French port town she found comparable to Fremantle. She remembered a French couple serving seafood from a few trestle tables and buckets of ice. The founders wanted a similarly simple, close-up setting, where the service itself was part of the experience.

They also said they saw a local opening for a straightforward oyster offer and a place to bring a bottle and share oysters. That was their stated rationale, not a measured claim about Fremantle’s wider hospitality market. As Davison told PerthNow: “The thing that really stood out to us was we felt like there was maybe a gap in the market for something that was a simple offering.”
Did Douzaine return?
A Fremantle Biennale Community Kitchen listing documents a Douzaine oyster offering on November 14 and 15, 2025, with Albany Rock Oysters in partnership with Leeuwin Coast. This was a later scheduled event; the listing does not establish that the Cantonment Street pop-up continued, that a permanent bar reopened, or that Douzaine is trading in 2026. The Biennale’s Community Kitchen listing is the dated record of that appearance.

A short run with its own endpoint
Douzaine’s founders framed the temporary project as worthwhile in itself, rather than as a launchpad that needed to become a permanent venue. Snyder later recalled customers asking what would come next and whether they were really closing, then described the experience as “the most beautiful learning curve and experience for us. It’s okay for it just to be that.” The 2025 event shows the name appearing again in a different context, but the available listing does not change the documented end of the original 2024 run.
