Fish eggs are commonly called roe, especially when they are discussed as food. “Fish eggs” is the clearest everyday wording; ova is the technical biological term. Caviar is narrower: it refers to particular processed roe, not all fish eggs.
What does “roe” mean?
Roe is the usual food-related English term for fish eggs or an egg mass. FishBase defines it as “The mass of eggs in the ovary.” The USDA National Agricultural Library likewise distinguishes the food term from the biological one, describing fish roe as “Fish eggs eaten as food; for fish ova USE fish eggs.”

Roe does not have to mean only loose, separated eggs. The University of Florida IFAS discusses both whole roe and individual eggs, so the term can describe an egg mass as well as its eggs.
When should you say “fish eggs” or “ova”?

Use “fish eggs” in ordinary conversation or when writing for a broad audience. It is plain and unambiguous, whether or not the eggs are being eaten.

Ova
Ova is the technical biological term, useful when discussing reproduction or fish biology. USDA’s terminology separates “fish ova” from “fish roe,” which it treats as a food term.

No. Roe is the broader term; caviar is a narrower processed food made from roe. CITES defines caviar for wildlife-trade purposes as processed, unfertilized eggs of Acipenseriformes species. That is an international trade definition, not a synonym for every kind of fish roe.
In US labeling guidance issued in October 1989, the FDA says the unqualified word “caviar” should apply to salted sturgeon roe. Its guidance allows roe from other fish to be identified with a fish-specific name followed by “caviar.” This is US guidance, not a universal labeling rule; consult current requirements for the market where a product is sold.
Examples of fish roe
Food examples include salmon roe, lumpfish roe, and flying-fish roe used for tobiko. Cod roe is another recognized category in the Codex Alimentarius food classification. Naming the species helps make clear what kind of roe is meant; these foods are not all caviar.
