Adam Cartwright did not die: Pernell Roberts left Bonanza in 1965, and the story sent Adam to sea. He did not return before the series ended in 1973. The later absence of Hoss Cartwright was different: actor Dan Blocker died in 1972, shortly before the show ended.
Why did Adam Cartwright disappear?
The oldest Cartwright son, Adam, was played by Pernell Roberts. The Television Academy identifies Roberts as one of the actors portraying Ben Cartwright’s three sons in Bonanza (Television Academy Foundation: Bonanza).
Roberts left the series in 1965. A 2012 Deseret News answer about Adam’s disappearance reports that Roberts had been outspoken in criticizing the show’s writing and direction. That provides context for his departure, but it does not establish criticism as the single reason he left (Deseret News, February 13, 2012).
Did Adam die or return?
No. The explanation given for Adam’s absence was that he had gone to sea. The show did not kill the character off, and Adam did not return before Bonanza ended in 1973, according to the Deseret News account.

How Adam’s departure differs from Hoss’s absence
Hoss Cartwright was played by Dan Blocker. His absence followed Blocker’s death in 1972, not an actor’s departure from the series. A June 20, 1973, Big Spring Herald report quoted Michael Landon describing Blocker’s death as one reason the program ended. That is Landon’s public explanation, not proof that it was the only reason the series concluded (Big Spring Herald, June 20, 1973).
The distinction is straightforward: Roberts left in 1965 and Adam was written as having gone to sea; Blocker died in 1972, and the series ended the following year. The available accounts do not establish the details of Hoss’s first post-Blocker episode, so it is best not to assume an episode-specific explanation.

What the cast and creators said about the ending
Lorne Greene, who played Ben Cartwright, was quoted in a retrospective TV Guide account recalling that after Blocker’s death he did not see how the show could continue. Greene also recalled telling his wife, “That’s it. It’s finished” (TV Guide).
The Television Academy Foundation’s David Dortort interview archive separately indexes chapters about the end of Bonanza in connection with Blocker and Roberts, as well as friction between Roberts and producers.
