At noon he can enter The One, a peak state that lasts only about a minute. His Divine Axe, Rhitta, stores some of the heat he gives off; it does not create Sunshine.
How Sunshine changes with the time of day
Think of Sunshine as a supernatural solar clock. Escanor is at his weakest around midnight. As the sun rises, his strength and size increase; after noon, they recede as daylight wanes. The cycle makes his power vary over the course of a day rather than remain at one level.

What The One means
The One is Sunshine’s brief noon peak, not a form Escanor can hold throughout the day. It lasts about one minute. Once that short window passes, the daily cycle continues, and his power falls with the sun.
Why Escanor looks and acts different
Sunshine changes more than Escanor’s combat strength. His body grows larger and more imposing during the day, while at night he is frail and deferential. The story pairs his daytime presence with pride and his nighttime manner with timidity; these are parts of his supernatural characterization, not real-world effects of sunlight.

Sunshine is a Grace, not Escanor’s innate power
Sunshine is identified as one of the Graces and was originally associated with Mael before coming to Escanor. It is therefore more accurate to describe it as a Grace that changed hosts than as a power Escanor was born with or learned as a spell.

Rhitta is Escanor’s Divine Axe, separate from the Grace. It can absorb and store some of the excess heat he radiates, which makes it a useful complement to his power. The axe neither grants Sunshine nor removes its dependence on the sun’s daily arc.
