More Than Málà: A Deeper Introduction to Sichuan Cuisine

Málà pairs Sichuan pepper’s tingling sensation with chili heat, but it is only one part of a cuisine shaped by varied ingredients, techniques, dishes and dining styles.

Sichuan cuisine is not simply food that is hot. Málà—the combination of chili heat and Sichuan pepper’s tingling, numbing sensation—is one recognizable flavor within a much wider cooking tradition, with varied seasonings, techniques, dishes and regional styles.

What does málà mean?

Málà (麻辣) describes two distinct sensations together: má, the tingling or numbing quality associated with Sichuan pepper, and là, the heat of chili peppers. They are not two names for the same kind of “spicy.” The Chinese government’s travel guide says málà often appears in Sichuan dishes, while also describing a cuisine built on many seasonings and a great variety of dishes. Travel China’s introduction to Sichuan food names Mapo Tofu and Kung Pao Chicken among its representative dishes.

For a home-cooking pantry, Sichuan peppercorns supply the characteristic má sensation. Chili oil, dried or ground chilies, and doubanjiang—a fermented chili-bean paste—can contribute the là side. The Mala Market’s April 2026 ingredient guide also discusses pepper oil as an alternative way to add the peppercorn’s flavor. How did chili become part of Sichuan cooking?

Chili peppers are a later addition to a region with a much older history of seasoning. Historian Hongjie Wang writes that Sichuan pepper had been used in Chinese food and drink for more than two millennia and remained a major spice until the sixteenth century. Chili peppers became established in Sichuan much later.

The exact routes and dates of chili’s transmission are uncertain. Wang notes that local Sichuan records begin mentioning chili cultivation and consumption in the nineteenth century; a 1909 menu of popular Sichuanese dishes included hot peppers among its major spices and condiments. This timeline supports a gradual historical account, not a confident claim that chili arrived by one specific route or in a single year. Wang’s historical account of chili peppers and Sichuan cuisine also discusses the Qing-era migration of more than one million peasants from Hu-Guang—today’s Hunan and Hubei—to Sichuan. That figure is historical context, not a measurement of the migration’s direct effect on the cuisine.

What makes Sichuan cuisine broader than “spicy”?

Its range is easier to understand by looking at flavor, technique and format together. Málà is prominent, but it is only one possible balance of tastes and sensations. Introductory material from India’s National Council for Hotel Management and Catering Technology describes doubanjiang as a deep, umami-rich base; yacai, preserved mustard greens, as a source of salty depth and texture; and black vinegar as a source of acidity and balance. Those ingredients show why “hot” alone cannot describe every dish. The council’s educational text on Chinese culinary arts is a useful overview, rather than a definitive authority on Sichuan culinary tradition.

Ingredients that help explain the range

  • Sichuan peppercorns: associated with the tingling, numbing side of málà.
  • Doubanjiang: fermented chili-bean paste used for depth and savory intensity.
  • Chili oil: an aromatic way to add chili flavor and heat.
  • Yacai: preserved greens that contribute salty depth and texture.
  • Black vinegar: a source of acidity that can balance a dish.

These ingredients are starting points, not a checklist every recipe must include. A simple first exploration is to cook with Sichuan peppercorns and taste what they contribute separately from chili heat.

Techniques beyond one kind of stir-fry

Reference material on Sichuan cuisine names stir-frying, frying, dry-frying and dry-stirring; the educational text also lists smoking and pickling. These examples suggest a varied repertoire rather than a single signature method. The Chinese Culinary Institute’s regional cuisine reference groups styles including Chengdu, Chongqing and Chuannan. It does not establish a complete city-by-city comparison or a ranking of those styles.

What are some ways to encounter Sichuan food?

Plated dishes and communal hot pot offer different ways to see the cuisine’s range. The government travel guide highlights Mapo Tofu and Kung Pao Chicken; neither should be reduced to a test of how much heat a diner can tolerate. A comparison of these dishes with hot pot is also a comparison of format: one arrives as a prepared dish, while the other makes cooking part of the meal.

Hot pot: cooking together at the table

Hot pot is more than a particular broth. The regional reference uses the term for the utensil, cooking method and dining style: diners cook ingredients in a shared pot as part of the meal. That communal format broadens the picture of Sichuan food beyond individual plated recipes.

Fuqi feipian: málà in a cold-dressed dish

The Mala Market presents fuqi feipian as an example of málà used in a cold-dressed dish. Its name translates amusingly as “husband and wife lung slices,” but the retailer says the dish contains no lung; it describes thinly sliced beef and offal. This is one example of a málà application, not a definition of Sichuan cooking as a whole. The retailer’s málà guide gives its account of the dish.

Where can a beginner go next?

Start by noticing what each ingredient contributes—peppercorn’s tingle, chili’s heat, fermented paste’s savory depth, preserved greens’ texture, or vinegar’s acidity—rather than treating every Sichuan dish as interchangeable spice. For a broader regional cookbook, Simon & Schuster describes Terry Tan’s The Food and Cooking of Sichuan and West China as covering Sichuan as well as Hunan, Hubei, Yunnan, Guizhou and Shaanxi, with recipes and an illustrated introduction to ingredients, tools and equipment.
