The official recipe gives oven and serving directions, but it does not say whether to assemble it ahead, refrigerate it, freeze it, or reheat it. So the recipe itself does not establish a make-ahead method.
What the official recipe says about making it ahead
Garten’s updated official recipe, identified on the page as from The Barefoot Contessa Cookbook – 25th Anniversary Edition, contains no advance-assembly, storage, freezing, or reheating directions. The words “make-ahead” should not be taken as a published instruction from Garten.
If you need to serve the dish later, the supported method is to follow the recipe and serve it hot after its stated 10-minute cooling period. Any plan to prepare or bake it in advance would be an adaptation, not a direction established by the official recipe.
Ingredients and equipment
The recipe makes 10 servings and specifies a 10 x 15 x 2-inch baking dish with a 10-cup capacity.

Hand-slicing the potatoes is allowed; a mandoline is optional. Aim for even, thin slices so the potatoes can reach the recipe’s tenderness endpoint in the stated bake window. The specified dish is relatively large, so check both capacity and dimensions before starting.
How to make Ina Garten’s potato-fennel gratin
- Heat the oven and prepare the dish. Set the oven to 350°F and butter a 10 x 15 x 2-inch, 10-cup baking dish.
- Cook the fennel and onion. Slice the fennel crosswise to make about 4 cups. Sauté it with the sliced onion in the olive oil and butter over medium-low heat for 10 minutes, until tender.
- Season and combine. Thinly slice the peeled potatoes by hand or with a mandoline. Mix them with 2 cups of the cream, 2 cups of the Gruyère, 1 teaspoon salt, and ½ teaspoon pepper. Fold in the cooked fennel and onion.
- Fill and top the dish. Transfer the mixture to the prepared dish and smooth it lightly. Combine the remaining 2 tablespoons cream with the remaining ½ cup Gruyère, then scatter over the top.
- Bake until done. Bake for 1 to 1¼ hours, until the potatoes are very tender and the top is browned and bubbly.
- Rest and serve. Cool for 10 minutes, then serve hot.
Timing and doneness
The updated official recipe calls for a 10-minute sauté and a 1-to-1¼-hour bake at 350°F. Treat the time as a guide and check the stated endpoints: the potatoes should be very tender, and the top browned and bubbly. A separate Food Network version attributed to Garten lists a 15-minute sauté and a 1½-hour bake; those timings differ, so they are not combined here in place of the current official directions.

Recipe source and attribution
The official page attributes the recipe to The Barefoot Contessa Cookbook – 25th Anniversary Edition. Garten’s cookbook index also lists Potato-Fennel Gratin under The Barefoot Contessa Cookbook, page 156. The Food Network recipe is another version attributed to Garten, but its bake and sauté timings differ from the updated official page.
