Anthony Bourdain’s reported five-ingredient sandwich combines mortadella, provolone, a roll, mustard and mayonnaise. The mortadella is browned or crisped in a skillet, the cheese melts over it, and the roll is toasted before assembly. The recipe is reported in his 2016 cookbook Appetites; published accounts describe it as inspired by a sandwich he ate in São Paulo.
The five ingredients
- Mortadella: a cured pork cold cut, sometimes made with pistachios.
- Provolone
- A roll: accounts name sourdough or Kaiser rolls; other versions suggest alternatives.
- Mustard: Dijon is specified in one account; another allows Dijon or yellow.
- Mayonnaise
Some written methods also use a little neutral oil to cook the mortadella. It is a cooking aid, not one of the five named sandwich components.
How the sandwich is prepared
Published accounts vary in some details, so this is a reported approach rather than a guaranteed word-for-word transcription of the cookbook recipe.
- Warm a skillet with a small amount of neutral oil.
- Fold or stack the mortadella into loose piles and cook until browned or crisp at the edges.
- Add provolone over the mortadella and let it melt.
- Split the roll and toast it in the skillet.
- Spread mayonnaise on one cut side and mustard on the other, then add the mortadella and melted cheese.
Where the recipe comes from
Tasting Table and Mental Floss report the recipe in Bourdain’s 2016 cookbook Appetites. Tasting Table and Chowhound connect it to a mortadella sandwich Bourdain encountered at Bar do Mané in São Paulo. Tasting Table says he adapted the cheese and roll to ingredients more readily available in the United States. The São Paulo sandwich is described as the inspiration; that does not establish that the cookbook version is identical to the restaurant’s preparation.

What varies between published versions
The central ingredients and skillet preparation are consistent across the accounts, while some choices differ:
- Bread: sourdough and Kaiser rolls are reported; a 2026 Parade version also presents brioche as an option.
- Mustard: accounts vary between Dijon alone and Dijon or yellow mustard.
- Cooking details: accounts differ in how they describe the amount of mortadella and how far it is cooked, from browned to crisp.
Those options are variations in published descriptions, not evidence of a single exact specification beyond the cookbook text.
