Jennifer Garner’s chicken enchiladas are a creamy, cheesy casserole made with shredded poached chicken, flour tortillas, green chiles and Monterey Jack. Garner herself notes that the family recipe is “barely related to enchiladas,” so think of it as an easy enchilada-style bake rather than a traditional version.

Garner’s indexed Instagram caption lists these amounts. It does not specify tortilla or can sizes.
- 12 flour tortillas
- 2 cups cooked chicken, poached and shredded
- 4 tablespoons butter
- 1 can cream of chicken soup
- 2 cans green chiles
- 1 cup diced onion
- 1 cup diced celery
- 2 pounds Monterey Jack cheese, shredded; Garner’s caption says her family halves the amount and buys it shredded for convenience
- 1 cup sour cream
Apartment Therapy’s reviewer used eight-inch tortillas, a 10.5-ounce can of soup and two 4-ounce cans of diced green chiles. Those are the reviewer’s choices, not specifications from Garner’s caption. The reviewer also fit eight tortillas in a 9-by-13-inch pan, illustrating that tortilla count and pan capacity depend on size and filling.
How to make the enchilada-style casserole
1. Poach and shred the chicken
Put chicken breasts in a pot and cover with cold water. Add onion, salt, peppercorns or other basic aromatics if desired. Bring the water to a boil, reduce the heat to medium and begin checking after 10 to 15 minutes. Cook until a thermometer inserted into the thickest part of each breast reads 165°F, then shred the chicken.

2. Sauté the vegetables
Heat the oven to 350°F. Melt the butter in a pan and sauté the diced onion and celery until softened. Stir in the shredded chicken.
3. Make the sauce and prepare the dish
Mix the cream of chicken soup, green chiles and sour cream. Butter or spray an oven-safe casserole dish, then spread some of the sauce mixture across the bottom. A 9-by-13-inch baking dish is a practical option; Apartment Therapy’s reviewer used that size.

4. Fill and arrange the tortillas
Fill each flour tortilla with some of the chicken mixture, roll it up and place it seam-side down in the dish. Spoon most of the remaining sauce over the rolled tortillas and cover with Monterey Jack cheese.
5. Bake until browned
Bake at 350°F for about 30 minutes, until browned. Apartment Therapy’s reviewer needed 40 minutes in their oven, so allow extra time if the top has not browned by 30 minutes.

What to expect from the recipe
This is a family-style, creamy casserole, not a traditional enchilada preparation. Apartment Therapy describes it as rich and cheesy, with mild heat from the green chiles. Garner shared it as a family favorite from her mother, Pat, and says the proportions can be increased to feed a football team and that the dish freezes well. In her Pretend Cooking Show caption, as reproduced in the indexed source, Garner wrote: “After decades in California I recognize these are barely related to enchiladas—but they go right down, anyway”.
Because the casserole is rich, Apartment Therapy’s reviewer suggests serving it with a crisp, acidic side such as a green salad with lime vinaigrette.
