Gordon Ramsay Reacts to a Raw Burger on *Kitchen Nightmares*: What Happened at Iberville Cuisine

On the January 14, 2025 episode of Kitchen Nightmares, Gordon Ramsay visited Iberville Cuisine & Oyster Bar in New Orleans. A segment showed the owner cooking burgers that staff described as raw; Ramsay then asked a more experienced cook to demonstrate the preparation and guide her. The scene was part of an edited television episode, not an independent inspection of food served to customers.

What happened in the raw-burger segment?

A People exclusive republished by Yahoo Entertainment, published January 14, 2025, reports that the episode took Ramsay to Iberville Cuisine & Oyster Bar. The owner took over cooking the burgers and said she had burned them. Staff sampled a small bite and called the patties raw; the report says some spat the food out. One wait-staff member was quoted as saying, “That’s raw.”

Ramsay asked a more experienced cook to show the owner how to prepare a burger and stay beside her as she cooked. The report describes a TV segment; it does not establish that these patties were sent to restaurant customers. Nor does it document an independent inspection of the restaurant.

Why does an undercooked hamburger matter?

Grinding changes the food-safety risk: bacteria that may be on the surface of a cut of meat can be distributed throughout the ground meat. That is why a burger’s exterior is not enough to establish that its center is safe. USDA Food Safety and Inspection Service (FSIS) advises cooking ground beef to an internal temperature of 160°F (71.1°C), checked with a food thermometer, and advises against eating or tasting raw or undercooked ground beef. Check temperature, not color

Color is not a dependable doneness test: ground beef can brown before it reaches a safe temperature, and a patty at 160°F can still look brown or pink. For a thin patty, FSIS advises inserting the thermometer probe from the side so its tip reaches the center. Its guidance is about food safety, not a judgment of culinary preference.

Prevent cross-contamination

Keep raw ground meat separate from cooked and ready-to-eat foods, and clean hands, utensils, and surfaces that contact it. FSIS identifies children under five, pregnant people, adults 65 and older, and people with weakened immune systems as more vulnerable to illnesses associated with contaminated ground beef.

What the report does—and does not—establish

The Yahoo Entertainment article dates the episode’s airing to January 14, 2025, and describes the season’s opening stretch as set in New Orleans around “Road to Super Bowl LIX.” The report does not establish whether anyone became ill, whether a health department investigated, or what happened to the restaurant afterward. It also does not provide a verifiable transcript of Ramsay using “Disgusting”; that word appears in the headline, not as a confirmed direct quote in the article text.
