Goop presents it as a flexible blueprint, so the recipe works as written or as a starting point for using what you have.
What’s in Gwyneth Paltrow’s chopped salad?
Goop published A Really Good Chopped Salad on May 3, 2020, with a stated yield of two or three servings. The ingredients are:
- 1 head romaine, chopped
- 2 avocados, diced
- 2 or 3 cooked red beets, diced
- 1 cup chickpeas
- ½ cup cherry tomatoes, halved
- 4 scallions, thinly sliced
- 3 peperoncini, sliced
The recipe’s dressing balances Dijon mustard and real maple syrup with red wine vinegar, neutral oil and extra-virgin olive oil. Coarse salt and black pepper season it to taste.
How to make the vinaigrette and assemble the salad
- Whisk together 2 teaspoons Dijon mustard, 2 teaspoons real maple syrup and ¼ cup red wine vinegar.
- Whisk continuously while slowly streaming in 2 tablespoons neutral oil and ½ cup extra-virgin olive oil. Season with coarse salt and black pepper to taste.
- Put the chopped romaine in a serving bowl. Arrange the diced avocado and beets, chickpeas, halved tomatoes, sliced scallions and peperoncini over the lettuce.
- Finish with the dressing and toss when ready to serve.
Why this combination works
The salad pairs creamy avocado and hearty chickpeas with the earthy sweetness of cooked beets, juicy tomatoes and sharp scallions. Peperoncini bring a tangy, briny note; the vinaigrette echoes that acidity with red wine vinegar while maple syrup softens it. Make-ahead, storage and variations
For easier advance preparation, The Kitchn’s April 26, 2025 coverage recommends chopping and storing the components separately in the refrigerator, leaving out the avocado until assembly. Drain and rinse canned chickpeas before using. Add the avocado, dress and toss the salad shortly before serving to keep the components distinct.

The Kitchn suggests making extra vinaigrette and keeping it in a Mason jar; its article says it keeps for about a week. That is the outlet’s storage advice, not a tested shelf-life guarantee. The same article offers optional additions such as roasted pumpkin seeds, tamari sunflower seeds or crushed pita chips for crunch, and suggests adding another protein if desired. These are adaptation ideas, not ingredients in Goop’s listed recipe.
