Senjumaru’s Bankai is the arc’s standout new reveal
The official episode 27 summary names Senjumaru Shutara’s Bankai as Shatatsu Karagara Shigaraminotsuji. In the episode’s story, the battle between Squad Zero and Yhwach’s Royal Guards reaches a turning point: Kirinji, Hikifune, and Nimaiya sacrifice their lives to break Squad Zero’s blood oath seal, allowing Senjumaru to use Bankai. The synopsis says the technique overpowers Uryu and the other Royal Guards.
This is the clearest answer to “Which new Bankai was revealed in the Thousand-Year Blood War arc?” It is a newly depicted and explicitly named reveal in the anime adaptation. That does not mean every Bankai seen or used throughout the arc is new.

The official episode 37 summary continues the final conflict, while the official Part 4 synopsis mentions Squad Zero’s powerful Bankai being shattered. That description does not name the Bankai as a new reveal, so it is not enough to identify another specific newly revealed Bankai.
