Aljosa Cok took over a restaurant site in Como, Perth, and relaunched it as Cucina 91, presenting the change as a reset after a succession of short-lived operations. In an August 2025 PerthNow report, Cok described refurbishing the venue and starting with new management, staff, menu and branding.
What happened to the restaurant in Como?
The restaurant is in Como, Perth—not Como, Italy. According to Sophie Gannon’s 8 August 2025 PerthNow feature, Cok had dined at the site about a year earlier, when it was known as Casa Delizia. He later took it over in December, after another operator had run a short-lived business there.
The report, citing Cok, says that business lasted four months and closed overnight, and that the venue then sat empty for eight months before he stepped in. Those details describe the history as recounted in the article and by Cok; they are not an independently verified business chronology.
Who owns Cucina 91, and why the name?
Aljosa Cok, an Italian-born restaurant owner, took on the site. He had worked as a pizza chef and restaurant manager in Italy and Perth. Cok said he saw potential in the location and premises despite being disappointed by the food and service during his earlier visit.

He described the relaunch this way: “We opened the doors under new management, new staff, new menu and rebranded it Cucina 91. I picked 91 because it’s the year of my birth.” The quotation was reported by Gannon in PerthNow.
What changed in the relaunch?
Cok said the venue was refurbished and reopened with a different team, menu and identity. He also said, “We didn’t keep anything from the old restaurant — menu-wise or food-wise.” His stated aim was a clean break rather than a continuation of the previous restaurant’s offer.

In Cok’s words, he “just wanted to see the place under new management and give it some fresh air.” The fresh-start framing is his account of the decision, rather than a claim that the relaunch erased the site’s earlier history.
What food did Cucina 91 serve in 2025?
The PerthNow feature described the restaurant’s focus as Italian cuisine, with many ingredients sourced from Italy. Its 2025 menu examples included:

- Roman-style carbonara, which the report specified was made without mushrooms, bacon or cream;
- gnocchi and fresh pasta;
- veal milanese, chilli mussels and risotto; and
- a fried lasagna entrée, described by Cok as lasagna coated in breadcrumbs and deep-fried, crisp outside and soft inside.
These are dishes reported in August 2025, not confirmation of what is on the menu now. Cok summed up his approach as sticking to “what Italian food should taste like — nothing too special, just something done the right way.”

Cucina 91’s official website currently presents it as an Italian restaurant in Como, Perth, serving handcrafted pasta and traditional pizza. Its menus page links dine-in, drinks and takeaway menus, while its booking page offers table reservations and advertises aperitivo hour from 5pm to 6pm.
