He did not know the transformation would brainwash him; when it was complete, he was turned against the X-Men.
Why Gambit offered himself to Apocalypse
Remy LeBeau’s decision was voluntary, but it was not an act of loyalty. Marvel’s official Gambit character history says he offered himself to Apocalypse because he intended to infiltrate Apocalypse’s ranks. Gambit meant to get inside the enemy’s organization, not become one of its committed followers.
What he had not accounted for was the transformation’s effect on his mind. Marvel’s account says Gambit did not realize the procedure would brainwash him. His willingness to undergo it therefore did not mean he knowingly agreed to surrender control of himself.
How the transformation made him Death
The setup appears in X-Men (2004) #184. In the issue summary from UncannyXMen.net, Gambit prepares for the transformation, while Apocalypse and Ozymandias warn that little of the Gambit his allies knew may remain afterward.

Marvel’s character history describes the result: Gambit emerges as the newest Horseman, Death. The brainwashing turns the plan to infiltrate Apocalypse’s ranks into a weapon against Gambit’s former allies.
What happens when Death faces the X-Men
X-Men (2004) #185 shows the immediate consequence. Its UncannyXMen.net issue summary describes Apocalypse presenting Gambit as his newest Horseman and the X-Men fighting Death. Rogue recognizes that this is not the Gambit she and the others are used to confronting.

What this account establishes—and what it does not
Marvel’s character history establishes Gambit’s motive, his lack of awareness that the procedure would brainwash him, and his emergence as Death. The issue-level scene details above come from UncannyXMen.net summaries, rather than direct inspection of the comic pages. These accounts explain the broad cause and immediate effect, but do not establish the full mechanics of Apocalypse’s procedure or how Gambit is later freed from the Horseman role.
