How to Check Restaurant Menus for Allergens and Dietary Requirements Before You Visit

A menu is only a first screen. Learn how to check ingredients, ask about kitchen handling and confirm your allergy or dietary requirement before ordering.

Check the restaurant’s current menu online, then call and ask whether it can verify your specific allergy or dietary requirement and explain how the dish is prepared. A menu label is a useful first screen, not a guarantee about ingredients, substitutions or cross-contact. Confirm the details again when you arrive; if staff cannot verify them, choose a simpler confirmed option or do not eat there.

How do I check a restaurant menu for allergens before I go?

Start with the restaurant’s current online menu to identify dishes that might work and questions to ask. Check descriptions for sauces, dressings, garnishes and sides as well as the main ingredient. Menu descriptions can omit ingredients or become outdated, so do not treat an apparently suitable dish as confirmed safe.

Then call the restaurant and ask to speak with a manager or someone who can verify ingredients and kitchen handling. Say exactly what you need to avoid and ask about a particular dish. For a food allergy, explain that it is an allergy rather than a preference; for celiac disease, say that you need to avoid gluten and need to know about cross-contact. Intolerance, vegan and vegetarian requirements are different questions, so name the exact ingredients or practices that matter to you.

In the UK, government guidance says, “Restaurants must give you accurate information about allergens, including if food contains any of the 14 allergens businesses must tell you about.” That does not remove the value of asking how a particular dish is made or whether its ingredients have changed. In the United States, FDA’s packaged-food allergen labeling rules generally do not apply to most food sold in restaurants that is not prepackaged with a label. Requirements and local rules differ; do not assume a menu must display the same information everywhere.

About one in three people with food allergies report having had a reaction in a restaurant, according to a CDC page published in 2024 summarizing restaurant research. The same CDC page summarizes a study in which more than half of restaurant staff interviewed had never been trained on food allergies. Those are reported research findings, not a current census of all diners or restaurant staff. They are a reason to ask clearly and assess the answers, not to assume any particular restaurant is unsafe.

What should I ask when I call?

Ask about the whole dish and the steps between preparation and service. A useful call is specific and practical:

  • “I have [name the allergy or requirement]. Can someone verify whether [dish] contains it?”
  • “Could you check the sauce, dressing, garnish, sides and any substitutions, not just the main ingredient?”
  • “How is it prepared? Are utensils, pans, surfaces, fryers or grills shared with the ingredient I need to avoid?”
  • “Can the kitchen use separate equipment or an area? If not, can the relevant surfaces and equipment be thoroughly cleaned and sanitized first?”
  • “Can you make a suitable dish or modification, and can you confirm that with the kitchen?”
  • “Are these ingredients and procedures current, or could they have changed since the menu was posted?”

CDC restaurant guidance identifies separate equipment and preparation areas as useful where feasible. If they are not available, its guidance recommends thorough cleaning and sanitizing. Ask what the kitchen can actually do; a general assurance that a dish is “free from” something may not explain how shared equipment is handled.

Food Allergy Research & Education (FARE) says, “Communication between restaurants and customers with food allergies is essential to a safe dining experience.” A wallet-sized chef card listing your allergy and cross-contact concerns can support that conversation and can be handed to the server to pass to the chef. It is a communication aid, not a substitute for staff confirming ingredients and preparation.

How do I know whether the restaurant can accommodate my requirement?

Judge the answers, not just the menu icon or the restaurant’s willingness to say yes. Look for a staff member who can check ingredients and give a clear account of preparation. If the first person cannot answer, ask whether a manager or kitchen staff member can verify. A suitable response should address the specific dish and the steps needed to prepare it, rather than relying only on a broad claim that the restaurant accommodates allergies or dietary requests.

When comparing restaurants or dishes, consider:

  • Ingredient verification: Can staff check all components, including sauces and garnishes?
  • Preparation details: Can they explain shared equipment and what cleaning or separation is possible?
  • A workable option: Can the kitchen make or modify a dish that meets your actual requirement?
  • Current information: Do staff confirm that the menu and ingredients reflect what is being served now?

For food allergies, FARE flags buffets, bakeries, pre-made foods, shared ice-cream scoops and fried foods as situations that can warrant extra questions about ingredients or cross-contact. These are screening considerations, not proof that a particular venue or dish is unsafe. Ask how the specific food is sourced, stored and prepared.

Do “gluten-free,” “vegan” or other menu labels mean a dish is safe?

No label answers every question about ingredients and handling. A gluten-free label may help identify an option, but someone with celiac disease should still ask what is in the dish and how the kitchen controls cross-contact. FDA defines “gluten-free” for packaged-food labeling; that definition does not establish that a restaurant’s self-description guarantees a particular preparation standard.

Likewise, a vegan or vegetarian label does not necessarily settle questions about hidden animal-derived ingredients or how food is prepared. If you have an allergy to an ingredient associated with a dish, ask about that ingredient directly even when the dish carries a dietary label. A label is a starting point for a conversation, not confirmation that a medically necessary restriction has been met.

In the United States, FDA identifies nine major food allergens: milk, eggs, fish, Crustacean shellfish, tree nuts, peanuts, wheat, soybeans and sesame. Sesame became the ninth major allergen effective January 1, 2023. These federal labeling rules concern most FDA-regulated packaged foods; they should not be read as a requirement that every restaurant menu identify allergens in the same way. FDA says it has not established a threshold level for any allergen, and precautionary “may contain” statements are not required by law in the packaged-food context.

The FDA Food Code is a model code, and state and local adoption can vary. Its 2022 edition discusses allergen awareness and cross-contact prevention as food-service safety concerns; it is not a uniform nationwide rulebook for every restaurant. The 2022 Food Code annex cites an estimate that approximately 4% of the U.S. population, or twelve million Americans, have food allergies. That is a figure presented in that edition, not a newly collected 2026 estimate.

What should I confirm when I arrive?

Repeat the allergy or requirement to the server and, if appropriate, the manager. Ask whether the ingredients or preparation have changed since you called or reviewed the menu, and make sure the kitchen receives the information. If you brought a chef card, show it and ask that it be passed to the chef. Confirm the specific dish and any modifications before ordering, rather than relying on a note from a previous visit.

If staff give vague, conflicting or uncertain answers, do not guess. Ask whether there is a simpler dish whose ingredients and preparation they can verify. If they still cannot confirm what is in it or how it will be handled, choose another restaurant or do not eat there. FARE advises diners to trust their judgment when communication is inadequate.

A practical before-you-go checklist

  1. Review the current online menu. Identify possible dishes and note questions about sauces, sides, garnishes or substitutions.
  2. Call ahead. Ask for a manager or someone who can verify ingredients and handling. State the exact allergy or dietary requirement.
  3. Ask about preparation. Check shared utensils, surfaces, fryers, grills and other relevant equipment, and ask about separate equipment or thorough cleaning and sanitizing.
  4. Decide based on what staff can verify. Choose a dish only if its ingredients and preparation meet your needs; consider a chef card as an aid for explaining the details.
  5. Confirm again at the restaurant. Tell the server and manager, check for menu or ingredient changes and ask that the kitchen receive the information.
  6. Change plans if necessary. If answers remain unclear or inconsistent, request a simpler confirmed option or do not eat there.
